Linseed oil is rich in omega-3 unsaturated fatty acids and has functions of preventing or treating cognitive disorders,cardiovascular diseases,circulatory diseases,immune dysfunction and inflammation.However,due to its low bioavailability and easy oxidative rancidity,the application of linseed oil is limited in functional food.Therefore,nanocarrier technologies were used to delivery linseed oil with additions of natural antioxidants such as vitamin E and resveratrol.Nanocarrier technologies also have good effects on improving their application bottlenecks.Linseed oil and vitamin E co-loaded nanoemulsions(VL-NE)were prepared by the high pressure homogenization technology.The particle size was about 137 nm and PDI was about 0.293.Storage study showed that VL-NE was more stable in low temperature environment(4?).In vitro simulated digestion studies showed that nanoemulsion technology could improve the digestion speed of linseed oil and was expected to increase its bioavailability.Studies on lipid oxidation products demonstrated that vitamin E could inhibit the secondary oxidation of linseed oil but promote the primary oxidation.High pressure homogenization method was used to develop nanoemulsions(RL-NE)for improving the solubility,bioavailability and stability of linseed oil and resveratrol.The particle size was about 157 nm and PDI was about 0.441.The good stability of RL-NE was demonstrated by measuring particle size,PDI and encapsulation efficiency of resveratrol at different storage temperatures(4?,25?;60 days).Antioxidant activity experiments implied the synergy effect between the two nutrients.In addition,in vitro release of resveratrol exhibited sustained-release property,and the digestibility of flaxseed oil was also improved.Furthermore,55?accelerated oxidation experiments showed that resveratrol could inhibit the oxidation of linseed oil.Linseed oil and resveratrol co-delivered nanostructured lipid carriers(RL-NLC)were prepared by hot high-pressure homogenization method.Its microstructure,storage stability,antioxidant activity,in vitro simulated release,lipid oxidation and other characteristics were studied.The particle size was about 105 nm and PDI was about 0.216.Nanoparticles had good dispersibility in aqueous solution,and maintained stable particle size,PDI and encapsulation efficiency during three months of storage at 25?.Encapsulated resveratrol exerted better antioxidant activity and UV light stability than unencapsulated resveratrol,and its in vitro release was a slow and continuous process.In addition,accelerated oxidation experiments at 50? demonstrated that the antioxidation of resveratrol and the solid lipid core in RL-NLC carrier together protected linseed oil.Finally,RL-NE and RL-NLC were added to pure milk for preparation of the milk mixture which could be stably stored for one month at 4?.In this paper,the development of three kinds of nutritional ingredients complex carriers can cause good effects on their applications in the field of functional foods.
