Chlorophyll is widely exists in the higher green plants while chlorophyll and itsderivatives have the characteristics of envirmental protection and physical safety.Through chemical method chlorophyll can turn to a series of different chlorophyllderivatives. To study the structure of the chlorophyll derivative and equilibriumconstant method of instrument analysis has been combined. The application of ironchlorophyllin calcium on edible printing ink and functional food has been studied.The method to study pentanone ring carbonyl of paste chlorophyll has beenestablished, i.e, carbonyl reagent2,4-dinitrobenzene hydrazine reacted withpentanone ring carbonyl of chlorophyll saponification product which produced redbrown chromogenic substance. Determined the degree of chlorophyll saponificationaccording to the absorbance of chlorophyll saponification product, and predictchlorophyll saponification product structure. Under the condition of NaOH solutionconcentration0.8%to1.5%got chlorophyll disodium salt. Under the condition ofNaOH concentration2.8%to4.0%got chlorophyllin three sodium salt.Bruker-500nuclear magnetic resonance (NMR) of chlorophyllin three sodiumsalt spectra shows that at chemical shift3.30existes a methylene unimodal ofchlorophyllin group of C=C-CH2-COOH. It shows that NaOH concentration2.8%to4.0%saponify chlorophyll gets chlorophyllin three sodium salt.The pheophorbide calcium and pheophorbide magnesium solubility productconstant are as follows:3.8968×10-20?3.2426×10-18. By mass spectrometry ESIto determine pheophorbide calcium relative molecular mass is1236.4.Complexometric titration method to determine pheophorbide combination radio withcalcium is1:1. Iron chlorophyllin stability constant was studied by equal molecontinuous variation method showed the stability constant is5.2353×104.The annexing agent iron chlorophyllin calcium application in edible ink, candyand jelly has been studied. The performance of iron chlorophyllin calciumapplication in the edible ink is stable.The new developed edible ink is resistant toalcohol, acid and water, but it can't resistant to alkali. The edible ink can meet therequirement of food on the surface of printing. Candy and jelly add ironchlorophyllin calcium the color is dark green, and they are not fade in natural lightirradiation for30days. They could provide elements of calcium and iron.Figure19; Table14; Reference78.
