As a special kind of wine,rice wine is more and more popular with its special health and nutrition.At present,most of the rice wine fermentation process is still be implemented by using the traditional methods,those methods lagging behind the progress of science and technology rely on artificial control,which lead to poor quality and stability.The fermentation process of rice wine is a nonlinear,robusting and time-varying system.At present,it is very difficult to establish a precise mathematical model to describe the quality of the process in detail.Therefore,the modeling of the quality characteristics of rice wine fermentation process is helpful to improve the quality of the fermentation process and the adaptive control performance.Under the premise of ensuring the quality of rice wine,the new technology of rice wine fermentation,which improves the automatic level,production efficiency,the on-line monitoring,and the adaptive control will be the main research content of this paper.On the basis of the research on the quality characteristics of the rice wine,the effect of dynamic uncertainty on the quality control of rice wine fermentation process was studied.The SPC control chart was used to control the whole process of SSJ rice wine production,this control method was in the whole process of production.In order to solve the temperature instability and inaccuracy problems,BP network was used for control of SSJ rice wine fermentation process by establishing a mathematical model to predict the quality parameters.By combining the BP neural network and fuzzy control,the control precision of temperature was improved in the process of rice wine fermentation.Combined with production of rice wine in SSJ,A Fieldbus Control System(FCS)based on the FCS controller and intelligent detectors was designed,to control the rice wine fermentation process.This system can monitor the temperature,PH value,dissolved oxygen and liquid level,provide real-time data query services and fault alarm during the production process.According to the feedback of adaptive control in rice wine production,real-time control of the process and the real-time display of data were realized.
