Based on the large yellow croaker myofibril protein and KGM as raw materials,preparation into large yellow croaker myofibril protein-KGM composite gel,using physical properties measurement meter,colorimeter,Rheometer and Fourier transform infrared spectroscopy instrument were studied to observe its gel strength,whiteness,water holding capacity,rheology and the microstructure,the following is the main research content and the results:1.The study of different adding quantity of KGM,different concentrations of the large yellow croaker myofibril protein and different temperature on the large yellow croaker myofibril protein-KGM composite gel's gel strength,whiteness,water holding capacity effects,and gel strength,whiteness,water holding capacity of composite gel were Optimized selection,the results of the study is:the adding quantity of KGM,the concentration of large yellow croaker myofibril protein,and temperature have extremely significant influence to composite gel's strength,when the adding quantity of KGM is 3.00g/100mL,the concentration of large yellow croaker myofibril protein is 40mg/ml,temperature for 80? composite gel strength is optimal.The adding quantity of KGM,the concentration of large yellow croaker myofibril protein and temperature have extremely significant influence to composite gel's water holding capacity.The results of the optimization are the adding quantity of KGM is 3.00g/100mL,the concentration of large yellow croaker myofibril protein is 40mg/ml,temperature for 70?.The adding quantity of KGM without significant effect to composite gel whiteness;the concentration of large yellow croaker myofibril protein and temperature on gel whiteness has some influence.The results of the optimization are the adding quantity of KGM is 2.50g/100mL,the concentration of large yellow croaker myofibril protein is 80mg/mL,temperature for 70?.2.The study of the effects of the different adding quantity of KGM,the different concentrations of the large yellow croaker myofibril protein to the large yellow croaker myofibril protein-KGM composite gel's rheology,the results of the study is the large yellow croaker myofibril protein-KGM composite gel is pseudo plastic fluid.Changes in the frequency mode,the composite gel form the adding quantity of KGM is 1.00g/100mL with the increase of frequency the composite gel system becomes unstable._In the heating process,the composite gel form the adding quantity of KGM is 1.00g/100mL and the concentration of myofibril protein is 20mg/mL,40mg/mL,60mg/mL with the increase of temperature,composite gel system gradually is not stable.In the process of cooling,the composite gel form the adding quantity of KGM is 1.00g/100mL with the decrease of temperature,the gel system is unstable3.The study observed of the different adding quantity of KGM,the different concentrations of the large yellow croaker myofibril protein of myofibril protein-KGM gel composite microstructure effects,the results show that:the changes of the adding quantity of KGM and the concentrations of the large yellow croaker myofibril protein,There was neither a new group nor the old group disappeared,but the characteristic peak shifts,analysis showed that increase the adding quantity of KGM and the concentrations of the large yellow croaker myofibril protein,the large yellow croaker myofibril protein-KGM composite gel can promote.
