Sericin protein is soluble in water,hydrochloric acid with solvent polarity,whch is a kind of high molecular weight protein crystals,and can be arranged loosely,and its molecular structure contains high hydrophilic groups.Its structure contains multiple functional groups of amino acids,and has activity,which can be fixed part of active small molecules,and at the same time,it also can be branched and peptide molecules connected,and is conducive to cell growth and division.When addedthe amino acid chain segment into the gel system,the two types of molecules of polysaccharide and protein showedgood properties,and achieved good compatibility to gel properties and biological regulation with material.This paper attempted to make use of the silk protein and konjac glucomannan,carrageenan and CMC compound preparation had good composite gel texture properties.Through the experimental study on rheology of konjac glucomannan,carrageenan,CMC and silk protein interactions and the possibility of sol properties,by using scanning electron microscopy and infrared technology,this paper explored the structural characteristics of composite gel interaction in order to provide reference for further application of konjac glucomannan carrageenan,CMC,silk protein in food.The main results of the research were as follows:1.The konjac glucomannan/silk fibroin phase behavior study,effects of konjac glucomannan/silk fibroin composite system phase behavior.In the formation of complex system under neutral condition was the solution of uniform and stable under acidic conditions It was easy to produce precipitation or phase separation,and obtained a uniform and stable system which would be formed when the concentration of KGM added to a certain extent,and adding a certain concentration of KGM could improve the stability of the system.Rheological analysis showed that KGM and konjac glucomannan/silk fibroin solution was pseudoplastic fluid,and the decrease of pH value does not affect the pseudoplastic mixed solution.Modulus and angle frequency scanning analysis showed that the konjac glucomannan/silk fibroin solution had obvious frequency dependent,and the solution was sol properties.2.Study on the phase behavior of carrageenan/silk fibroin,rheological analysis showed that carrageenan/silk fibroin solution was pseudoplastic fluid,and the decrease of pH value did not affect the pseudoplastic mixed solution.Modulus and angle frequency scanning analysis showed that the carrageenan/silk fibroin solution had obvious dependence on frequency,the solution was sol properties.3.Study on the phase behavior of CMC/silk fibroin,rheological analysis showed that CMC/protein mixed solution was pseudoplastic fluid,and the decrease of pH value did not affect the pseudoplastic mixed solution.Modulus and angle frequency scanning analysis showed that the CMC/protein mixed solution had obvious frequency dependent,the solution was sol properties.
