Edible vegetable oil has been an important source of fatty acids and various trace functional components.With the development of social economy,people have higher and higher requirements for edible vegetable oil.People pay more attention to the content of unsaturated fatty acids and various trace functional components in edible oil than the heat transfer function of edible oil itself in cooking.Therefore,moderate processing technology has always been a major research topic faced by various oil processing scholars.This problem has plagued major oil processing enterprises for many years and has not been effectively solved.The study on the basis of the traditional refining of edible vegetable oil,the refining process of gardeniae fruit oil was optimized,especially in the degumming and deacidification process,the new refining processes such as soft degumming and compound decolorant decolorization were used to refine gardeniae fruit oil,in order to retain more functional ingredients in the refined gardeniae fruit oil.In present study,the degumming,deacidification and decolorization process of gardeniae fruit oil were studied.The optimum refining process conditions were obtained by taking the residual phospholipid content,deacidification rate and decolorization rate as indicators,and the functional components and physical and chemical indexes of the oil were detected,so as to explore the oil moderate processing technology.1.In order to study the effect of soft degumming on gardeniae fruit oil,a single factor experiment was carried out by using SDS concentration,EDTA concentration,degumming time and degumming temperature as parameters,and the optimum conditions of gardeniae fruit oil soft degumming were obtained through orthogonal test.Furthermore,the effects of soft degumming and phosphoric acid degumming on physicochemical properties,fatty acid composition,functional components and DPPH free radical scavenging ability of gardeniae fruit oil were analyzed.The results showed that the optimum conditions for soft degumming were degumming time 30 min,degumming temperature 65 ?,SDS 40mmol/L and EDTA 50 mmol/L.Under this condition,the phosphate content of soft degumming gardeniae fruit oil decreased92.83 %,while that of phosphoric acid degumming oil only decreased 74.99 %.Comparing with curde oil,the peroxide value and acid value of soft degumming oil were decreased significantly,however the peroxide value and acid value of phosphoric acid degumming oil were increased significantly.The DPPH free radicalscavenging ability of the soft degumming oil was also significantly higher than that of the degumming oil.The content of functional components between two degumming oils did not show significant difference.Our data showed that soft degumming process not only has higher degumming rate,but also improves the quality of gardeniae fruit oil.It may be a suitable degumming process for.gardeniae fruit oil refined.2.Using gardeniae fruit degumming oil as raw material,four factors including alkali refining time,alkali refining temperature,super-alkali capacity and alkali concentration were selected to carry out single factor test.Then the optimization conditions for gardeniae fruit degumming oil in deacidification by response surface method(RSM)was performed.The result showed that alkali refining time was revised to 31.11 min,alkali refining temperature was 66.67 C,alkali refining concentration was 12.83 %,super-alkali capacity was 0.44 %.Under the optimized conditions,the average deacidification rate was 96.12 % by three parallel experiments,which was almost the same as the predicted deacidification rate of 96.55 %,and the acid value was 0.14 mg NaOH/g after deacidification.Under this condition,the acid value of the deacidified oil was lower,the deacidification rate was higher,and the gardeniae fruit oil was an opaque oil.After degumming and deacidification,gardeniae fruit oil contains a certain amount of water and saponification,so that the oil will present a transparent and clear state,and then the subsequent follow-up steps will be taken.3.The detection wavelength of gardeniae fruit oil decolorization ratio was confirmed by means of full wave scanning which was conducted by ultraviolet-visible spectrophotometer,and decolorization ratios under 670 nm was selected as the experiment indicators,and the effects of the four single factors(decolorizing temperature,decolorizing time,proportion of decolorizing agent and decolorant amount)on the decoloration process by compound decolorant studies.On the basis of single-factor experiments,four factors were chosen to conduct 4-variable 3-level response surface response surface methodology(RSM)to optimize the decoloration process.The optimum decolorization conditions were deduced as follows:decolorization time was 20.22 min,decolorization temperature was 92.62 ?,decolorant amount was 0.89 %,proportion of decolorizing agent was 1:12.12,and the predicted maximum decolorization rate was 96.65 %,which significatly improved the clarity of gardeniae fruit oil.
