China is a big producer of apples.According to statistics,in 2015,China's Apple planting area was about 35 million Mu,and the total output of apples was more than 40 million tons.Among them,Apple is our most common fruit.The pulp contains many kinds of beneficial ingredients for the human body and is deeply loved by the public.However,the decay of apples has brought great economic losses to fruit farmers and also brought economic and physical harm to consumers.In the process of Apple storage and transportation,Apple will appear stale,if it can not be discovered and processed in a timely manner,it will cause even greater economic losses.Therefore,Apple freshness detection has important significance in Apple preservation,storage and so on.How to detect the freshness index of Apple quickly and accurately is the key point and difficulty of Apple freshness detection.In this paper,we investigate the freshness of Apple by means of the method of fuzzy sensory synthetic evaluation and dielectric characteristic recognition.In this paper,a test platform for Apple freshness detection is presented.The dielectric characteristics of Apple were analyzed,and the relationship between the internal quality and external characteristics of Apple and dielectric characteristics was studied.The changing trend of the dielectric parameters(capacitance C,dielectric loss D,dielectric constant)from fresh to decaying was measured by intelligent LCR measuring instrument.On the basis of the mathematical analysis of Apple fuzzy sensory recognition,Apple fruit surface,fruit color,smell and texture were selected as evaluation indexes.The Apple freshness was identified by smell recognition,the Apple freshness was detected by sensor array,the Apple freshness was evaluated by BP neural network recognition,and the Apple freshness was evaluated by fuzzy sensory recognition algorithm.The experimental results show that the fuzzy sensory synthesis evaluation algorithm(common matrix multiplication)is combined with odor recognition,and theaccuracy of Apple freshness is 93.75 %.This method has dielectric characteristics that can recognize the advantages of Apple internal decay,have the efficiency of odor recognition and the synthesis of fuzzy sensory recognition.It can judge four indicators and can more fully identify Apple freshness,thus improving the accuracy of Apple freshness.
