Biogenic amine is a class of low-molecular-weight organic compounds with biologically active nitrogen.It is produced by decarboxylation of free amino acids through microbial amino acid decarboxylase.The right amount of biogenic amine is good for human health.However,the amount of biogenic amines will cause toxicity and poisoning.In this paper,high performance liquid chromatography(HPLC)was used to determine the changes of biogenic amine content in illexargentinus at different storage temperatures,and the main characteristics of biogenic amines were determined.Meanwhile,the amine-producing bacteria in illexargentinus were isolated and identified,and their amine-producing ability was analyzed.Then,the inhibition effect of ?-polylysine hydrochloride and thymol and their compounding on the main biogenic amines in illexargentinus was measured.It can provide a theoretical basis to development of bioamine control technology in aquatic products.The specific research content as follows:2.Temperature had a significant effect on the changes in biogenic amines of illexargentinus during storage.The main biogenic amines produced in illexargentinus were phenethylamine,putrescine,cadaverine,tyramine.The indicators of TBA and TVC in illexargentinus decreased with different storage temperatures rising,and the sensory quality decreased.The biogenic amine content in illexargentinus stored at25 °C,4 °C and 0 °C increased with the increase of temperature,and the rate of biogenic amine production increased at 36 h,9 d,12 d,and the sensory evaluation reached an unacceptable range.Storage at-20 °C can control illexargentinus to better quality,and biogenic amines were at a lower level during storage,indicating that low temperature freezing could effectively control the changes of biogenic amines and quality of illexargentinus compared with other storage conditions.3.The amine-producing bacteria isolated in illexargentinus were also different at different storage temperatures.Under the storage conditions of 25 °C and 4 °C,23 strains of amine-producing bacteria were obtained,including 16 strains of putrescine-producing,16 strains of cadaverine-producing,14 strains of histamine-producing,and 2 strains of tyramine-producing.The A1 and B1 strains had strong bioamine production,and the amine production and amine production are slightly different.4.The gene amplification of the producing ammono bacteria was carried out by PCR amplification technique.After identification at 25 °C storage conditions,a total of screening results including Citrobacter sp.(five strains),Hafnia alvei(two strains),Pantoea agglomerans,Obesumbacterium proteus,Kluyvera cryocrescens,Klebsiella aerogenes;After identification at 4 °C storage conditions,a total of screening results including Enterobacteriaceae bacterium,Citrobacter braakii,Klebsiella aerogenes,Obesumbacterium proteus(three strains),Hafnia sp.(six strains).5.The compound preservative(0.025 % ?-polylysine hydrochloride + 0.025 %thymol)could effectively control the biogenic amines in illexargentinus,which was more effective than 0.05 % ?-polylysine hydrochloride and 0.05 % thymol.Under the condition of the same preservative,the ice temperature storage had better inhibition effect on the biogenic amines of illexargentinus.During the whole storage period,the composite preservative group reduced the biogenic amines to 40 %~60 % or more for the control group.At the same time,it could effectively reduce TBA and TVC,slow down the color change of the muscle of the illexargentinus,delay the rise of the pH value of the sensory quality,and prolong the shelf life of the illexargentinus.
