In this study,we optimized the extraction conditions of the dietary fiber from Lentinus edodes stem and the physicochemical and functional properties of the extracted dietary fiber were determined,including water holding capacity,oil holding capacity,swelling capacity,cation exchange capacity,glucose adsorption capacity,cholesterol adsorption capacity,fourier transform infrared spectroscopy and antioxidant capacity(DPPH radical scavenging ability,hydroxyl radical scavenging ability,superoxide radical scavenging ability),finally develop high-fiber mooncake,the sensory,color and texture of the mooncake are measured to determine the optimal formula.The shelf life test of the mooncake of the optimal formula was carried out under different storage temperature conditions(25?,37?).The optimal formula of the mooncake was accelerated oxidative rancidity test and the antioxidant effect of the insoluble dietary fiber(IDF)of Lentinus edodes stem in the mooncake was analyzed.The results were as follows.1.Optimization of dietary fiber extraction process: the optimal extraction conditions were ultrasonic time of 20 min,ultrasonic power of 400 W,ultrasonic temperature of 60? and the soluble dietary fiber(SDF)yield of 13.23%.2.Determination of physicochemical and functional properties of extracted dietary fiber: 1)Water holding capacity,oil holding capacity and swelling capacity of SDF are 6.22 g/ g,6.14 g/ g,2.20 mL/ g,Water holding capacity,oil holding capacity and swelling capacity of IDF are 10.94 g/ g,9.40 g/ g,5.10 mL/ g;2)The cation exchange capacity of SDF is better than IDF;3)The glucose adsorption capacity of SDF is better than IDF at the same glucose concentration and both with concentration increased adsorption capacity increased;4)The cholesterol adsorption capacity of SDF(2.76 mg/ g)is much higher than IDF(0.21 mg/ g);5)SDF antioxidant capacity is better than IDF.3.Development of high-fiber mooncake: 1)The sensory evaluation,color analysis and texture analysis were used to determine the optimum amount of IDF of Lentinus edodes stem was 6%;2)The shelf life test was carried out with the optimal formula,the shelf life was 14-15 days under the storage condition of 25? and the shelf life was 12-13 days under the storage conditions of 37?;3)Using the optimal formula to accelerate the oxidative rancidity test,it was found that IDF has a certainantioxidant effect.
