Significantly limited safety of the frying oil is on account of reasons such as varied source of supply,great consumption and recycling use.In addition,no scientific standardization for management of frying oil existed.Recently,news about "the saliva oil" were frequently heard.As the tail end of supervision of law enforcement,which problems catering industry reflects are easy to be traced.With catering industry is increasingly prosperous and restaurant cooking oil is being paid extensive attention,study on which will be an objective reflection for the safety of restaurant cooking oil in Beijing,and provids an scientific reference for the supervision of catering industry.We collected and statistically analyzed 550 test data on catering food oil and 481 test data on frying oil sampling between 2011-2013 all over the districts of Beijing.The result of research shows the recent status of frying oil safety in Beijing.We samples 40 major,84 medium-sized,30 mini-type catering enterprises and 55 snack bars,15 fast-food shops as Kentucky and McDonald,as 10%level sampling different scales in Xicheng District,and then investigate sanitation management inside them.The investigation results could improve the supervision of catering industry.The test data of catering food oil,frying oil sampling and hygienic investigation data were analyzed with SPSS 13.0.The numeration data will be treated by X2 analysis or Fisher precision probability methodology;ANOVA is used for measurement data,and Kruskal Wallis analysis will be used when variance shows heterogeneity.Statistically significant is shown when the P value<0.01.The safety of edible oil was in good condition in recent years and the sampling percentage of pass is highly qualified.But,the management levels of various types of catering enterprises were imbalanced,and even worse those snack bars without catering service license.The mini-type enterprises and snack bars were defective with the establishing of management system and machine account,or requesting the certificate of purchases comparing with major one.Majority of these snack bars were running without the catering service license.The manufacturer and agency of catering food oil of catering industry in Beijing were mostly located around Beijing,coastal city and Sichuan province.The safety of catering oil is basically based on material source supervision.Also the result shows the insufficiency of examining indexes.The benign development of catering industry in Beijing need not only strengthen supervision,but also enhance self-regulatory of mini-type and below catering enterprises.Targeting employees training,improvement and implement of management system for these catering enterprises,reinforcing of employees' legal awareness,increasing the illegal cost and researching rapid detection technology would be helpful.
