Noodles and rice are the most important staple food in China.The fresh-wet noodle in noodles are delicious and easy to eat.They are always the favorites on the table.For a long time,China's noodle industry relies on Japan and other countries,lacking its core competitiveness.China is a populous country.Noodle food has a good market demand.Under the national plan of manufacturing 2025 in China,the development of food equipment manufacturing industry will also usher in spring.Firstly,this paper analyses the current research situation at home and abroad,studies the current process route,and puts forward the existing problems and shortcomings at this stage,and expounds the significance of this study.Then,according to the relevant processing parameters and the specific technical requirements of fresh and wet noodles,a novel fresh and wet noodles production line was designed by using the theory of fuzzy evaluation to optimize the design of the overall plan.Under the new noodle process plan,the production efficiency is higher and the product quality is better.Secondly,aiming at the key technology of noodle production line,detailed design and three-dimensional solid modeling of calendering and cutting device are made,design capacity meets 880 kg/h.The calendering ratio and roll size are studied in detail,and the calculation formula of roll transverse pressure is deduced by calendering theory,which realizes the theoretical checking of roll.Thirdly,in connection with the scheme design and calendering process,the heat exchanger of the boiling part is analyzed by ANSYS,which ensures the reliability of the parts and strictly checks the noodle quality,so as to save heat energy and improve the utilization rate of resources.It also provides the engineering theory reference for the future research of related heat exchangers.Finally,the full text is summarized and prospects for further research are made.This paper is a theoretical innovation and practical application of the current related research,which has a good role in promoting fresh and wet noodle equipment,and also provides some reference for the development of other related equipment.
