| The Premna microphylla Turcz leaves have high pectin content,rich nutrition,high content of medicinal ingredients.More and more farmers have planted them as economic crops,which is rich in resources,but the related basic research and application research are insufficient.Therefore,this paper attempts to comprehensively study the basic components of dried Premna microphylla Turcz leaves,dry powder processing and its practical application,in order to solve the key technological problems of the industrialization and utilization of it,to achieve standardization,annual production,and expand the application of it.(1)The basic components of the fresh leaves of the Premna microphylla Turcz from the different producing areas of Dazhou,Sichuan;Ankang,Shaanxi;Anqing,Anhui;Jinhua,Zhejiang and Fengdu,Chongqing were analyzed and determined,and each item has a big difference.The content of fat,protein and total phenol in Zhejiang are the highest,which were3.79%,22.49%and 30.37 mg GAE/gDW respectively.The content of ash and Ca in Chongqing are the highest,which were 8.85%and 26.817 mg/g,respectively;The content of pectin,total flavonoids,K,Fe,Mn and P in Anhui are the highest,which were 27.16%,69.77mgRE/gDW,32.360 mg/g,0.825 mg/g,1.513 mg/g and 4.750 mg/g,respectively.In the UPLC-QTOF-MS analysis,a total of eight compounds were found,which were preliminarily identified as malic acid,caffeic acid,costic acid,caffeoyl hexose,clucosyl isorhamnetin,kaempferol coumaroyl-hexoside,diosmetin 7-O-rutinoside(diosmin)and kaempferol3-O-β-D-glucopyranosyl-(1→2)-β-D-glucopyranoside.(2)The effects of freeze-drying,hot-air-drying after blanching or not bleaching and sun-drying on the physical and chemical properties of the Premna microphylla Turcz powder were studied.The results showed that the hot-air drying after blanching group has the highest brightness and the best greenness.The electronic nose analysis showed that the effect of drying to eliminate its odor is obvious.The bulk density of hot-air-drying was the smallest,and the water absorption index was the largest,which were 0.32 g/mL and 28.14 g/g,respectively.The hot-air-drying after blanching group has the best oil holding and the most pectin,which were1.91 g/g and 28.57%,respectively.The emulsification activity and emulsion stability of the freeze-drying group were the best,which were 97.68%and 90.04%,respectively.Considering comprehensively,it is advisable to use hot-air-drying to process the Premna microphylla Turcz leaves after blanching.(3)The effect of mixed blanching(zinc gluconate 0.1%,calcium chloride 0.2%,citric acid0.04%)temperature,blanching time and hot-air-drying temperature on the quality of dried Premna microphylla Turcz powder was investigated.According to response surface test,the best conditions for drying and powdering are as follows:the temperature of the blanching liquid was 90℃,the blanching time was 78 s,and the hot-air-drying temperature was 57℃.The storage stability test of the Premna microphylla Turcz powder showed that the vacuum packaging at 4°C has the best preservation effect.The product quality standards for the Premna microphylla Turcz powder were formulated.(4)Researching on application of the Premna microphylla Turcz powder throughing orthogonal test,we can found the best formula of biscuit are as follows:in the basic formula(based on 100 g low-gluten flour,2 g baking soda,20 g whole egg liquid,water amount),the addition amount of butter,sugar and Premna microphylla Turcz powder were 40 g,30 g and 6 g respectively.The optimal process parameters of the Guanyin tofu are as follows:material to liquid ratio was 1:16(g/mL),CaSO4,MgCl2 and konjac flour were 0.08%,0.05%,and 0.25%,respectively. |
