Heavy metal pollution is one of the key factors causing food quality and safety problems in China.With the improvement of living standards,due to delicious,snack food has been paid more and more attention in daily food consumption.The food industry of Yueyang area,which locates in the east of Dongting lake,is relatively developed because of abundant agricultural resources,one of the leading representatives of the food industry in Yueyang area is fish snack products.It is very significant to carry out a comprehensive investigation and risk assessment research of the heavy metal pollution in Yueyang snack fish products,which can promote the healthy development of snack fish products industry and guide consumers to consume safely.Meanwhile,it will also provide a theoretical basis of the supervision and treatment for local government.In this paper,after optimization of microwave digestion-inductively coupled plasma mass spectrometry for heavy metal pollutants determination of snack fish products,content and distribution of heavy metals(including Pb,Hg,Cd and As)in 246 snack fish products sample in Yueyang area three years(2016-2018)has been analyzed,then using Risk Simulator Risk assessment software and Monte Carlo model to calculate the HQ of heavy metals in Yueyang area fish snack food hazards,the Yueyang fish snack food intake of heavy metal Risk has been scientifically described,the main research results as following:1.To improve the stability of the components to be tested and shorten the pretreatment time,the pretreatment conditions of microwave digestion-inductively coupled plasma mass spectrometry for simultaneous determination of Pb,Hg,As and Cd in recreational fish products has been optimized,the optimal condition as following:72Ge,115In and 209Bi were selected as internal standard elements to eliminate the non-mass spectral interference in the inspection process;the memory effect of Hg was eliminated by adding Au solution into the working solution and sample solution,the recovery rate of Pb,Hg,As and Cd was from 89.0%to 102.5%.2.After analysis of content characteristics and distribution of Pb,Hg,As and Cd pollutants in the fish snack food in Yueyang area,the results demonstrated that the contents of four heavy metals(Pb,Hg,As and Cd)in 246 samples all is in line with the national standards.The average contents of Pb,Hg,As and Cd were 0.0324mg/kg,0.0044mg/kg,0.0579mg/kg and 0.0113mg/kg,respectively;the detection rate of Pb,Hg,As and Cd were 68.18%,30.08%,96.37%and 50.41%respectively,the detection rate and the average content of As is significantly higher than the other three kinds of heavy metals.In the distribution of four kinds of pollution,the highest detection rate is snack fish food using cuttlefish as raw materials,the second is squid as raw materials;the pollution degree of four heavy metals in freshwater fish is higher than that of seafood fish,and the detection rate of As in freshwater fish can reaches 98.97%,which rank second only to cuttlefish.The results indicated the distribution of pollution in different types of recreational fish products is directly related to the origin of raw fish and the way of life activities.3.The heavy metal risk of Yueyang primary and middle school students(aged 6-18)consuming fish snack food was described,HQ ingested by Pb,Hg,As and Cd was 0.0145,6.567E-03,0.0099 and 0.0458,respectively;the MHQ ingested by Pb,Hg,As and Cd was 0.0305,12.63E-03,0.0189 and 0.0755,respectively.The results about average values of HQ and MHQ of the four heavy metals all indicated that the consumption of fish snack food by Yueyang teenagers is relatively safe,and the contribution values of HQ and MHQ of Cd are close to 60%,among the four heavy metals,Cd is the most likely to cause harm to Yueyang teenagers and children,followed by Pb.
