Rice is the largest grain yield in China.Rice is the most important food grain for the people of our country.Therefore,rice processing is an important industry which is related to the country and has a huge consumption market.With the progress of the society and the improvement of the people's living standard,many consumers have been difficult to accept the rice with rough appearance and poor taste.To eat rice with high processing precision and good appearance("bright"),the processing enterprises in order to cater for the market demand,more and more strengthen the milling and polishing links,which lead to the Overprocessing of rice,and then cause the waste of quality loss and loss of nutrition.This study is one of the sub subjects of the "investigation and evaluation of the loss and waste of grain processing links" in the public welfare industry of the National Grain Bureau in 2015.It mainly completed the investigation of the quality loss and waste in the process of rice processing and the preliminary research on the factors affecting it.Based on the questionnaire survey and sampling analysis of more than ten rice processing enterprises in Hubei,Hunan,Jiangxi and Yunnan provinces,the preliminary research results show that:(1)the waste and wastage caused by cleaning and ridge link are very few,less than 1/1000.The reason is that the technological effect of the related equipment has reached the mature level.(2)Overprocessing is the main cause of the loss of quality,and the results also show that the quality of the raw grain,the technological conditions,the equipment conditions and the management level make the quality loss and waste degree of the rice milling and the post-processing link obvious difference.(3)Overprocessing also resulted in the increase of the RRRT rate and the decrease of the rice rate,which resulted in the loss of grain rice,and the amount of the loss increased obviously with the increase of the number of milled rice and the number of polished channels.
