Shanxi pasta culture,a typical representative of regional food culture,is an important part of Chinese food culture.The study of Shanxi pasta in the Ming and Qing Dynasties is a historical investigation of the basic elements of life of Shanxi residents.To thoroughly understanding the meaning of Shanxi pasta in the Ming and Qing Dynasties,this article is trying to seek the intrinsic motivation and deeply exploring the cultural implication.This article consists of four parts.The first part involves the development environment of Shanxi pasta culture in the Ming and Qing Dynasties.The natural part plays a decisive role.The social and economic part provides the possibility for the innovation and development,while the agricultural development in Shanxi is directly related to the pasta culture.Secondly,The specific situation of Shanxi pasta development in this period,in terms of production conditions,varieties,characteristics of the people's pasta,and the influence of Shanxi pasta.The inheritance and development of Shanxi pasta made Shanxi pasta have a certain influence,but there is still a big gap between the pasta market in Shanxi and other pasta markets in the north and south.In the third part,Shanxi pasta is closely related to Shanxi folk customs,such as closely related to the seasons,life rituals and social life.The agricultural worship of the gods,the daily emotional satisfaction,and the social behavior norms embodied in the pasta are the intrinsic attributes of the Shanxi pasta culture.Finally,the cultural diversity of Shanxi pasta in this period was very rich.Pasta culture reflects the self-improvement and innovation of Shanxi people;it also belongs to the female culture,and women are both creators and inheritors of Shanxi pasta culture;it is also related to fairy beliefs;the development of Shanxi merchants promotes the development and renewal of Shanxi pasta.It expands the variety and influence of Shanxi pasta,but it has little effect on the core of Shanxi noodle culture.In general,the Shanxi noodle culture in the Ming and Qing Dynasties is the civilian food culture under the leadership of the small-scale peasant economy.
