3D printing has a high degree of flexibility and powerful modeling capabilities.The edible material 3D printing technology has not been popularized in the market at present.On the one hand,it is limited by the functions of 3D printing equipment;on the other hand,it lacks reasonable printing process parameters.In this paper,a 3D printing experimental platform suitable for granular raw materials was set up to print sucrose moulding parts with good quality,and the physical and chemical analysis and molding process parameters of sucrose materials were studied.Firstly,sucrose was selected as the raw material for printing according to the quality requirements of the molded parts and the feasibility of 3D printing.The thermal analysis experiment and viscosity test experiment of sucrose were carried out to study the changes of its thermal reaction and its viscosity during the temperature change process of sucrose.The optimum heating temperature of sucrose was obtained by comprehensive theoretical analysis.Secondly,the 3D printing experimental platform was designed and built.The relationship between screw speed and extrusion speed was deduced.The process parameters and the matching of related parameters which,affect the final quality of sucrose in the molding process were studied.The factors other than technological conditions were also analyzed.Based on the results of single factor experiment,the range of process parameters suitable for the 3D printing of sucrose was obtained.Thirdly,finite element simulation was carried out on the melting pool location of 3D printing nozzle,and the flow and velocity changes of molten sucrose in the melting pool were simulated and analyzed,and the suitable screw speed was obtained through theoretical analysis.Finally,the extrusion swelling phenomenon of molding line at different temperature and rotation speed of screw were studied.Through the experimental research,the improvement method was obtained.In order to obtain a good result of the main target,the best combination of process parameters for sucrose 3D printing was obtained by combining theoretical and experimental research.The sucrose model printed in this process can meet the actual needs and has certain reference value for sucrose materials applied in other fields.
