As one of the twelve representative flavors of Chinese liquor,Soybean flavor liquor is famous for its special craftsmanship and unique soybean flavor,and it is very popular among consumers in Guangdong and Guangxi and overseas.In this study,the rat model was used to study the method of establishing the post-drinking feeling of soybean flavor liquor.The physiological and biochemical indexes of rats in different periods after drinking three soybean flavor liquor were evaluated to determine the rat’s feelings.The comfort of the soybean flavor liquor in rats after drinking;afterward,using the open field experimental equipment,the spontaneous activity of the rats was recorded continuously by the camera 24 h,and the spontaneous activity parameters of the rats were collected;combined with the self-issued parameters of the rats and the results of physiological and biochemical experiments using the particle algorithm to optimize the support vector machine model for the soybean flavor liquor finished wine,explore a method that can quickly and accurately reflect the comfort of the soybean flavor liquor after drinking.The main results are as follows:(1)The results of plasma ethanol and acetaldehyde in rats showed that the degree of ethanol accumulation and the degree of conversion to acetaldehyde were different in the blood at different time points in the 6h after the using of three types soybean flavor liquor JD,J5,and J12 were intragastrically administered.The lowest alcohol metabolism after low dose drinking is J5,followed by JD,and faster metabolism is J12.After high dose drinking,JD-administered rat plasma has the highest level of ethanol accumulation and the slowest metabolism,and the alcohol metabolism trend of J12 and J5 is similar,and the metabolism is relatively fast.(2)By testing the levels of serotonin in the serum of rats with JD,J5 and J12 three kinds of musk-type liquor at different time points,it was found that in the low dose,three soybean flavor liquor would be in 6 hours.It did not cause a significant increase in serum 5HT in rats;in high-dose gavage,JD and J12 did not cause a significant increase in rat serum 5HT at the observed time points,whereas the levels of J5-administered rats were significantly increased at 1.5h,4.5h,and 6h,suggesting that the J5 rats may be in an uncomfortable state at these three moments,suggesting that after a large amount of musk-type liquor J5,6 hours may cause headaches and other symptoms.(3)The results of determination of key neurotransmitters in rat striatum after drinking showed that the low doses of drinking,through Glutamic acid(Glu)and-aminobutyric acid(GABA)content changes can be inferred:6 hours after JD drinking,the rats appeared at 2.5h,3.5h and 6h The discomfort state of the action inhibition;after drinking for 6 hours,the rats were in a state of discomfort with inhibition of action within 6 hours;after drinking J12,the rats were in a state of suppressed behavior within 4.5 hours.At high doses,only the changes in Glu and GABA content can be used to infer the discomfort of action inhibition at 0.5h,1.5h,and 3.5h after J12 drinking.(4)The results of immunofluorescence staining of rat brain neurons demonstrated that low-dose three-type musk-type liquor can cause the excitability of GABAergic neurons and cause inhibition of Glu system.However,the level of GABA BR1 should be lower than that of the same concentration of edible alcohol.The higher the original alcohol degree,the closer the effect is to edible alcohol,J12>J5>JD hint may be due to the difference in the number of trace components caused by the degree of distillation,which is caused by this phenomenon.(5)By using rats at the time of 0.5h and 1.5h,each time before and after 5min(±300s)behavioral parameters(moving distance,moving time,stagnation time)and corresponding state inferred from physiological and biochemical indicators as the PSO-SVM model training data set,establishing a normal and uncomfortable binary classification model,the training results are The low-dose group had a higher accuracy rate with an average accuracy of 90%,while the high-dose group had a training result of only 77.78%and the lowest reached 33.33%.Therefore,the established model achieved a binary determination of the comfort of rat musk-type liquor after low-dose drinking within 0-1.5h.
