The problem of adulteration of goat milk powder and adulteration of donkey meat is becoming more and more serious.This is not only a deceptive act,but also seriously jeopardizes the health of the broad masses of the people.The traditional method for identifying adulterated goat milk powder and adulterated donkey has different limitations,gas chromatography-ion mobility spectrometry(GC-IMS)has multiple advantages.Therefore,this study uses gas chromatography-ion mobility spectrometry for fresh goat's milk,milk powder,goat's milk powder and adulterated goat's milk powder,donkey meat,horse meat and adulterated donkey meat,donkey meat,pork and adulterated donkey meat was volatile matter analysis and adulteration identification.The main findings are as follows:(1)The difference in volatile components between fresh goat milk and goat milk powder was studied: goat milk powder and fresh goat milk have similar volatile constituents,but they all have their own characteristic volatile substances,and the total concentration of volatile substances in goat milk powder higher than fresh goat milk.Many of the volatile substances common to them are found in 15 kinds of goat milk powder samples,such as n-hexanal,(E)-2-heptenal,1-pentanol,etc.These volatile substances shared in all goat milk powder samples can be used as An important basis for distinguishing between goat milk powder and milk powder.(2)Identification of milk powder,goat milk powder and adulterated goat milk powder: The composition of volatile substances in milk powder and goat milk powder is quite different,and the volatile substances in goat milk powder are more abundant.In the sample of adulterated goat milk powder,with the increase of the proportion of milk powder,the concentration of characteristic volatile substances in goat milk powder gradually decreased,and the composition of volatile substances in adulterated goat milk powder showed a trend change close to that of milk powder.Goat milk powder,milk powder and adulterated goat milk powder are better differentiated.(3)The differences in volatile matter between different parts of the donkey meat were studied: the composition of volatile matter between the donkey meat samples was roughly the same,and the donkey rib row meat(D-5)and the donkey buttock meat(D-6)were different from the other four different parts of the donkey meat,there are some differences in volatile substance concentrations,which is introduced into the donkey mixed meat with the mixing of the donkey meat.Therefore,these volatile substances are also present in the mixed meat of donkey rib row meat(D-5)and the donkey buttock meat(D-6).(4)Identification of adulterated donkey meat mixed with horse meat or pork: the volatile matter composition of horse meat and donkey meat is quite different,the volatile matter of the donkey meat is rich,and the concentration of volatile substances is high.All of them have their own volatile substances.In the sample of adulterated donkey meat mixed with horse meat,the concentration of characteristic volatile substances in the donkey meat gradually decreases with the increase of the proportion of horse meat mixed.Different proportions of adulterated samples as the proportion of horse meat increases,its overall nature gradually moves away from the donkey meat.2-Decapenone,2-pentylfuran,(E)-2-octenal,heptanol,2-hexen-1-ol,etc.are characteristic volatile substances of donkey meat,butyl sulfide,benzene Formaldehyde,propionate,acetone,hexanal,3-methylbutanal and the like are characteristic volatile substances of horse meat.Dimethyl disulfide,3-methylbutyric acid,valeraldehyde,benzaldehyde,and hexanal are characteristic volatile substances in pork.The composition of volatile substances in pork and donkey meat varies greatly.The overall change trend of volatile matter composition of different proportions of adulterated donkey meat mixed with pork is similar to that of adulterated donkey meat mixed with horse meat.As the proportion of pork increased,the concentration of volatile substances in the donkey meat gradually decreased.Compared with horse meat,the incorporation of pork had a greater impact on the volatile matter composition of the donkey meat.Donkey meat,pork and horse meat,the adulterated donkey meat of the horse meat and the adulterated donkey meat mixed with the pork were well differentiated.
