Crassostrea gigas is a kind of marine invertebrate,and it is one of the most important economically cultured shellfish in China.The polysaccharide contained in C.gigas is a biologically active substance.In this paper,C.gigas polysaccharide?CGP?was used to produce C.gigas polysaccharide wine?CGP wine?and C.gigas polysaccharide ferment beverage?CGP ferment beverage?;in addition,the biological activities of them were studied to provide basic data for the utilization of CGP in products.The Misgurnus anguillicaudatus is an animal of Misgurnus,Cobitidae,Chordata,which contains lectin with antibacterial immunity in its surface mucus.In this paper,the physical properties,chemical properties and biological activities of M.anguillicaudatus lectin?MAL?were studied,which provided basic data for the further study of MAL.The main results of this paper are as follows:1.The CGP was co-fermented with Saccharomyces cerevisiae,a kind of yeast,and it was found to promote S.cerevisiae proliferation.The analysis by UV-vis Spectroscopy and Fourier transform infrared spectroscopy?FTIS?showed that the interaction between CGP and wine polyphenols increased with the increase of polyphenols in wine;additionally,the addition of wine polyphenols altered the conformation of proteins in CGP by altering the stretching vibration of C-N.The CGP wine was fermented by CGP,Cabernet Sauvignon and wine yeasts.The aroma components of CGP wine were analyzed by GC/MS.Compared with wine without CGP,CGP wine had higher content of Silanediol,2-Octen-1-ol,1-Deoxy-d-mannitol;moreover,CGP wine had more complex ester aroma.2.CGP ferment beverage was produced by fermenting CGP and a variety of fruits and vegetables.The CGP ferment beverage had better antioxidant activity than the ferment without CGP.CGP ferment beverage had the effect of lowering blood sugar in mice which were given alloxan to induce diabetes;furthermore,the content of TG was decreased?P<0.05?in mice,and the content of TC,GSP,urinary creatinine and urea nitrogen were significantly decreased?P<0.01?in mice which were given CGP ferment beverage?400,800 mg/kg/day?.3.MAL was isolated and purified by homogenization,ammonium sulfate fractionation,DEAE-52 and HPLC on TSK G4000PWXL from the skin of M.anguillicaudatus.The hemagglutination activity was inhibited by Galactosamine and Galactose;moreover,it also could be inhibited by N-acetyl-D-galactosamine,Mucin from porcine stomach and Thyroglobulin.SDS-PAGE showed that the MAL had a molecular mass of 60 kDa.The hemagglutination activity of MAL affected by different physical and chemical conditions,and temperature showed an obvious effect on its hemagglutination activity.When MAL was exposed to high temperature for a long time,its hemagglutination activity was significantly reduced until the activity was lost;in addition,the optimum pH of MAL was 7-8.MAL contained 11.48%Ala,11.20%Asp,10.33%Lys and 9.09%Gly.MAL was found to have the effect of scavenging DPPH·,ABTS+·and·OH.
