Research On Beef Food Safety Traceability From The Perspective Of Supply Chain

China is a big country of beef cattle farming and consumption,the amount of beef cattle breeding and storage account for more than half of the global total.At the same time,beef is one of the main sources of meat protein,and it is essential for people to survive.The quality and safety of beef is closely related to the health of the people and can not be ignored.However,at present,"terminal inspection" is adopted to control meat products including beef in our country,but the supervision of beef cattle raising and slaughtering in the early stage is very lacking,so it is impossible to realize the fast traceability management of beef product quality.Based on the systematic analysis of beef production link and supply chain in China,the traceability system model of beef product safety is constructed in this paper,which provides reasonable countermeasures and suggestions for beef product safety tracing.This thesis is divided into three parts.Firstly,based on the review and analysis of domestic and foreign research status,this paper analyzes the problems existing in beef food safety traceability in China,and based on the principle concept of food safety traceability.The RFID technology,traceability coding and identification technology are studied.Secondly,based on the beef product security supply chain,the product identification of beef product in the whole supply chain is determined.Combined with the HACCP method of food safety system certification,the food safety traceability method,key control links and traceability information are judged,and the analysis of the whole business process is realized.After that,the whole process of traceability system is modeled by Petri net model,and the rationality of the model is evaluated by using the evaluation method of association matrix.Finally,the case of Liaoning Taian Jintian specialized beef cattle breeding cooperation company is introduced.The application of RFID technology in beef food safety traceability system was analyzed,and the theoretical model was tested.Through the research of this paper,the following conclusions are drawn:(1)based on the beef coding identification scheme and the traceability study of meat supply chain,The Petri net model of beef product traceability whole process system is constructed.(2)combining radio frequency identification technology and HACCP system method,A relatively safe and reliable beef product safety traceability system was established.(3)the rational design scheme of beef product supply chain was put forward.Through the research in this paper,it is helpful to solve and optimize the traceability problem of beef products supply chain,so as to further guarantee the quality and safety of beef products.
