In this study,response surface analysis was used to optimize the extraction of soluble proteins from non-heading Chinese cabbage.According to Box-Behnken's principle,the extraction time,extraction temperature,ratio of liquid to material,and concentration of extracts were selected to significantly influence the extraction rate of soluble protein.Factors were optimized and variance analysis was performed on the results to obtain the optimal extraction method for soluble proteins.This experiment also studied the changes in the main nutritional qualities of summer non-heading Chinese cabbage varieties,including vitamin C,soluble protein,polyphenol content,reducing sugar,and antioxidant activity.The nutritional contents of different Chinese cabbage varieties were compared and analyzed.The main results are as follows:1.Based on the single factor experiment,the extraction process of soluble protein from non-heading Chinese cabbage was optimized by response surface methodology.The optimum parameters were as follows:extraction temperature was 25.99?,extraction time was 64.81 minutes,material-liquid ratio was 14.04:1,Buffer Concentration was 0.08 mol/L.The predicted amount of soluble protein extracted was 9.62 mg/g.Taking into account the convenience of the actual operation process,the extraction temperature was 26?,the extraction time was 65 minutes,the ratio of solid to liquid was 14:1,and the buffer concentration was 0.08 mol/L.Soluble protein extraction was performed in five parallel experiments under the process.The average value was 9.51 mg/g,which was only 0.11 mg/g difference from the predicted value.The fitting rate was good,which proved that this optimization scheme was reasonable and feasible.2.In this study,seven non-heading Chinese cabbage varieties were sown in the summer,and nutritional indicators were measured at 20d,40d,60d,and 80d after sowing.Purple non-heading Chinese cabbage has relatively high nutrient content.The nutrient content of leaves in all varieties is higher than that of petiole,and anthocyanins are mainly found in purple varieties.The change of main nutrient quality within 80 days after sowing was analyzed.The change trend of main nutritional quality content of summer sowing cabbage in high temperature environment was analyzed.The ratio of nutrient contents in leaf petioles of different time periods was analyzed.The above findings can be used to determine the harvest of summer sowed cabbage.Period for reference.This study also analyzed the correlation between the eight nutrition indicators,The correlation between the indicators in the petiole was weaker than that of the leaves.There is a highly significant positive correlation between polyphenols and anthocyanins,antioxidant activity,reducing sugars,and soluble sugars in leaves.Therefore,polyphenols can be used as breeding indicators to provide basis for cultivating high-quality varieties with rich nutrient content and shortening breeding.cycle.
