Sodium glutamate is the main component of Monosodium glutamate(MSG),and is widely used in various foods as an umami substance.Its safety has been recognized by various food safety regulatory agencies,but since the birth of MSG,people's perception has been controversial,that long-term consumption of MSG can lead to dizziness,tinnitus,decreased intelligence and carcinogens caused by high temperature heating.In fact,the side effects of MSG on health are due to a large amount of intake,not the normal consumption.Recently,some studies have suggested that body health is closely related to the intestinal flora and its metabolites,and the effect of MSG on the intestinal flora should also be considered as part of its safety.Therefore,it is of great significance to study the effect of MSG on intestinal function and intestinal flora,as a more reliable and taste-enhancing evidence provided by the public.This study used 4-week-old male SPF BALB / C mice as the research object,Low,medium and high concentrations of 30 mg / kg·BW,300 mg / kg B W,and 1500 mg / kg·BW MSG were selected as the experimental group,100 mg / kg·BW Na Cl,and the blank group(Con)as the control group.Investigate its effects on mouse body weight,thymus index,spleen index and CRP,TMAO,Ang? secretion levels in blood;explore its effects on small bowel morphological changes and small intestinal cytokines(IL-1?,IL-6,TNF-?)and SIg A secretion levels and fecal Alb content;explore their effects on mouse intestinal flora.The results showed that compared with the Con group,30 mg / kg·BW MSG increased mouse weight,promoted mouse growth and development;increased mouse thymus index,enhanced body immunity;increased small intestinal villi height,and improved small intestinal digestion and absorption.Compared with 100 mg / kg·BW Na Cl,300 mg / kg·BW MSG increases the height of the intestinal villi and maintains intestinal morphology;reduces the content of Alb in feces,maintains intestinal permeability and stability,and reduces intestinal cytokines(IL-1?,IL-6,TNF-?),relieve intestinal inflammation;increase SIg A secretion in the small intestine,protect the intestinal mucosal barrier,and improve intestinal mucosal immune function.Different doses of MSG can reduce the members of the family Ruminiclostridium and Desulfovibrionaceae to varying degrees;30 mg / kg BW MSG can increase the abundance of Oscillibacter,300 mg / kg·BW MSG increases the abundance of Oscillibacter,Alistipes,and Bifidobacterium,thus proving that MSG can increase the richness of the intestinal flora and improve probiotics content.Therefore,MSG is a safe food flavoring agent.Moderate intake of MSG can promote intestinal growth and development and healthy development of intestinal flora.The results of this trial provide new evidence for the safety of sodium glutamate and a new approach for a low sodium diet.
