Cooking oil fume is a three-phase mixture of gas,liquid and solid produced during high temperature processing of food.Due to the complex composition and difficulty in environmental governance,it seriously threatens the health of the ecosystem and residents.With the vigorous development of the tertiary industry in China,cooking oil fume has become one of the important sources of urban air pollution,and the purification and treatment of cooking fume should not be overlooked.However,the existing oil fume purification device has a complicated structure,high maintenance costs,low purification efficiency,and the efficiency decay phenomenon is serious with the increase of the use time,which makes it difficult to achieve an ideal purification effect.The development of energy-saving and efficient oil fume purification technology has become the key to cooking oil fume treatment.The purpose of this thesis is to introduce the principle of multi-layer woven mesh inertia capture into the process of cooking oil fume purification through technological innovation,taking equipment design perspective as a starting point,and using the technology of seawater desalination and salt mist separation for reference.Improve purification technology and promote the rapid development of oil fume purification equipment.Therefore,in this thesis,an inertial capture and purification system for cooking oil fume is constructed to test the practical application effect of the multilayer screen inertia capture principle in the oil fume purification process,the process parameters are optimized.The research contents are as follows:(1)The correspondence between the bulk velocity and the air velocity at the center of the pipe in the 160 mm circular pipe is obtained through experiments.The results show that when the main air velocity is 2.0?3.0 m/s,the pressure drop of the knitted fibrous packing of the oil fume inertia capture and purification device is 400?750 Pa.Reducing the filling rate of the knitted fibrous packing can effectively reduce the pressure drop.The knitted fibrous packing with a filling rate of 12.3%has a lower filling pressure drop while avoiding short circuit of the air flow.(2)The purification performance of the multi-layer woven mesh inertial capture module is explored.Under the bulk velocity of 2.6 m/s,the purification efficiency can reach more than 90%,which meets the national standard for the minimum removal efficiency of cooking oil fume purification facilities.With the filling rate between 12.3%and 15.3%,the inertia capture device shows good oil fume removal performance,while the filling rate is lower than 11.4%,the purification efficiency is greatly reduced.The purification process of oil fume is complicated.With the change of cooking method and heating temperature,the character of pollutants changes.With the change in the number of stoves activated,the oil fume treatment load fluctuates dramatically.The results show that the device can guarantee the purification efficiency of more than 90%for the oil fume pollutants produced at different heating temperatures,low concentration fume pollutants and high concentration fume pollutants.(3)FLUENT software was used to explore the process of interaction between the fluid and the surface of the woven mesh from the perspective of pressure drop changes.Finely adjust the arrangement of the woven meshes to improve the process of fluid redistribution to guide practical applications.(4)Combining experimental results and fluid dynamics simulation,a design scheme for cooking oil fume purification product is designed,which can be applied to large and medium-sized catering industries.With 800 mm×800 mm square air duct,the total gas flow can reach 6000 m3/h,and the cooking oil fume purification efficiency can reach more than 90%.
