Lotus seed is a special agricultural product with both edible and medicinal.It is rich in a variety of biologically active ingredients and has high nutritional health care value.In order to further improve the convenience of eating lotus seed products,expand the scope of processing and development of lotus seeds,and meet the people's consumption demand,quick-frozen fresh lotus was used as the raw material in this study to prepare the lotus seed instant powder by using biological enzymatic hydrolysis technology and spray drying technology.In this study we optimized the enzymatic hydrolysis process,spray drying conditions and instant solvents,to developed the lotus seed instant powder with excellent solubility and on this basis to develop the lotus seed meal replacement powder.The purpose is to enhance the additional value of lotus seeds and promote a scientific foundation for the further development of the lotus seed industry.The main research results are as follows:(1)Research on lotus seed pulp enzymatic hydrolysisIn order to increase the dissolution of water-soluble components of lotus seeds,this study used response surface optimization experiment to optimize the enzymatic hydrolysis process of ?-amylase,papain and cellulase.The results showed that the amount of ?-amylase was 8710 U/g,the amount of papain was 2.6%,the enzymolysis time was 5.2 min,the yield of water-soluble components was 82.45%,and the enzymolysis effect was the best.(2)Research on spray drying technology of lotus seed instant powderTo improve the phenomenon of sticking to the wall during spray drying and increase the powder collection rate of lotus seed instant powder,we researched the effects of four factors,including the maltodextrin addition,the spray drying inlet temperature,the compressed air flow rate and the feeding rate,on the powder collection rate and dispersion time of the lotus seed instant powder,as well as optimized the optimal processing technology conditions of spray drying to prepare lotus seed instant powder.The results showed that when the maltodextrin addition was 20%,the spray-drying inlet temperature was 180 ?,the spray-drying compressed air flow rate was 513 L/h,and the spray-drying feed flow rate was 7.5 m L/min,the lotus seed instant powder collection rate was the highest and the dispersion time is moderate.(3)Research on improving the instant solubility of lotus seed instant powder with instant solventsIn this study,we researched the effects of the addition of instant solvents such as whey protein isolate(WPI),soybean lecithin,and acacia gum on the instant solubility of lotus seed instant powder.We optimized the addition of instant solvents by response surface optimization experiment and compared the physical and chemical properties of lotus seed instant powder.The results showed that when the addition of WPI was 10.20%,the addition of soybean lecithin was 2.60%,and the addition of acacia gum was 1.10%,the instant lotus powder had the highest solubility with 95.14%.At the time,the lotus seed instant powder has a regular shape,uniform size,smooth surface,and small particle size.It has low water-holding capacity,oil-holding capacity,wettability,dispersibility and agglomeration.It also has higher solubility,larger angle of repose,lower bulk density and easier to fill.It can effectively improve the physical and chemical properties of lotus seed instant powder.(4)Development of lotus seed meal replacement powderIn this study,we used the lotus seed instant powder as the basic raw material and added appropriate addition of soy protein isolate powder,acesulfame,vanillin for compounding to develop low sugar lotus seed meal replacement powder.We researched the effects of the addition of acesulfame and vanillin on the sensory quality of lotus seed meal replacement powder,therefore compared the main components and physical and chemical properties of lotus seed meal replacement powder and lotus seed instant powder.The results showed that the lotus seed meal replacement powder by adding 50% soy protein isolate powder,0.1% acesulfame,and 0.4% vanillin scored the highest sensory quality point,which complied with the National Standards for Solid Beverages and Group Standards for Meal Replacement Foods(Chinese Nutrition Association).Furthermore,compared with lotus seed instant powder,lotus seed meal replacement powder has less sugar but higher protein content and nutritional value,lower calories but higher swelling degree,which can be quickly dissolved.In addition,it can meet the nutritional demands of the daily diet of consumer.
