Aquatic products have rich nutritional value because they are rich in various nutrient elements and essential amino acids of human body,and they have delicious meat and excellent taste,which received people's love and pursuit.However,the aquatic products grew in the water environment for a long time,they were extremely vulnerable suffered pollution by the influenced water environment,which would endanger people's health and even life safety.In order to protect consumers' health,aquatic products would be sanitary tested before they were sold,of which the test of pathogenic microorganism was the most important link.In particular,in recent years,aquatic product safety accidents caused by microbial contamination have continuously occurred,arising people's continuous attention to the impact of microbial food safety,which made microbial control of aquatic products more important.In this case,this paper took a city of Liaoning Province as the research area,and conducted relevant investigation and study on the microbial contamination of pathogenic microorganisms in aquatic products.The research results are as follows:(1)Survey on qualified rate of sampling inspection of aquatic products on sale: 717 samples of raw food aquatic products were detected.Among them,74 samples were detected with pathogenic microorganisms.The total detection rate of pathogenic microorganism was 10.3%.The total number of the qualified sample of colony was 643,and the qualified rate was 89.7%.The qualified coliform group was 592,and the qualified rate was 82.6%.From high to low,the qualified rate of four common pathogenic microorganisms were 97.1% for Salmonella,96.7% for Listeria monocytogenes,93.1% for Vibrio parahaemolyticus and 92.8% for Staphylococcus aureus.According to the analysis from different sources,the qualified rate of samples collected in supermarkets(94.1%)and hotels(94.7%)were both higher than that of markets(92.8%).According to the analysis from different processing methods,the qualified rate of samples treated by disinfection at low temperature(92.8%)was higher than that of untreated samples(91.2%).According to the analysis from different regional division,the qualified rate of samples collected in central urban area(94.2%)was higher than that of the surrounding areas(90.2%).(2)Questionnaire survey: 400 residents from 8 districts of the city were selected to conduct the random questionnaire survey.The survey showed that the proportion of respondents who knew the harm of raw food aquatic products was only 46.75%.According to the statistical analysis,the rate of understanding the harm of microbial contamination of aquatic products was related to people's gender,occupation and identity,but not related to age and educational degree.(3)Analysis and research on the causes and solution strategies of pathogenic microorganism pollution in aquatic products being sold: Through the analysis of the source of pathogenic microorganism of polluted aquatic products,the main pollution routes were from water sources for aquatic products,environment and equipment during processing and transportation,cleaning water and personal hygiene of operators,storage environment during sales process,and awareness of food hygiene safety of sales personnel.In view of the analysis of different sources and routes,combined with the actual situation,we can take some measures to sterilize the breeding environment and water source of aquatic products by using bactericidal agent,disinfect and sterilize the environment and equipment in the course of process,transportation and marketing,use low-temperature bacteriostatic devices in the process of transportation,improve the health and safety consciousness of the relevant workers,suggest that the relevant functional supervision departments should establish a supervision system with clear responsibilities to solve the pollution problem of pathogenic microorganism in aquatic products.
