Semen Armeniacae Amarum is a kind of nut.It has many biological activities and its composition is complicated.At present,the traditional thermal extraction not only has high energy consumption and high pollution,but also damage the thermal sensitive ingredients in Semen Armeniacae Amarum.This paper adopts a processing technology that simulates the human digestive system.After this process,the biological activity of bitter almonds is increased significantly.In addition,this paper first provides a way to evaluate the reducing triglyceride activity of various components in Semen Armeniacae Amarum.It can provide a feasible idea for the high value utilization of Semen Armeniacae Amarum.The main research is as follows:(1)Determine the components in Semen Armeniacae Amarum from Hebei Chengde,which the fat content is about 55.2%,the soluble protein content is about 19.8%,the amygdalin content is about 2.82%,and the total flavonoid content is about 1.2 ‰.After processed by the simulated digestion process,the content changes and the antioxidant activity(free radical scavenging ability and ferrous ion reduction)Ability)is enhanced.What's more,the experimental results show that the amygdalin and flavonoids have obvious inhibitory effect on pancreatic lipase,and two simulated digestion products have good bile salt binding ability.(2)Use LC and LC-MS analysis the simulated digestion fermentation products.Adding free fatty acid in culturing HepG2 cells to build a high triglyceride cell model and use this model to evaluate the reducing triglyceride activity of various components in Semen Armeniacae Amarum.Experimental results show Amygdalin and vitamin E have good ability to reduce intracellular triglycerides.
