As a by-product of tartary buckwheat processing,tartary buckwheat skin powder is rich in dietary fiber,flavone and protein,and has health care functions such as regulating intestinal microecology,lowering blood sugar,lowering blood lipid and relieving constipation.However,there is a lack of strong and effective sterilization technology in the processing of tartary buckwhe at present.This study is to solve the problem of excessive microorganism of in the processed products of tartary buckwheat skin powder,and to optimize the conditions for better application of tartary buckwheat skin powder in health food.The animal experiments and human experiments proved that tartary buckwheat cortex powder have the function of defecation.The main findings are as follows:(1)The microbial residue,color,moisture content,total dietary fiber content and swelling power of the sterilized materials were used as the evaluation indexes tn the experiments,six sterilization processes of tartary buckwheat skin powder including irradiation sterilization,dry heat sterilization,far infrared sterilization,alcohol heating sterilization and moist heat sterilization were studied and moist heat sterilization showed effective with maximum maintains of the total dietary fiber content,swelling power.(2)In order to further study the moist-heat sterilization technology of tartary buckwheat skin powder,the sterilization effect of 10 min,15min,20 min,25min and 30 min at the temperature of 100°C,110°C and 120°C was studied respectively.The results showed that with the increase of sterilization temperature or time,the total number of colony and the number of mould and yeast decreased gradually,and the total number of colony after sterilization was more balanced and the sterilization effect was uniform.The optimum condition of moist heat sterilization is optimized as 120°c sterilization for 15 min.(3)The feasibility of continuous dynamic wet-heat sterilization process for tartary buckwheat skin powder was studied.The results showed that the continuous wet-heat sterilization processing could ensure the sterilization effect and product quality for large-scale industrial sterilization of tartary buckwheat skin powder.(4)Animal experiments showed that the tartary buckwheat cortex powders sterilized both by intermittent wet-heating and continuous dynamic wet-heating had the similar health function of defecation.It was found that tartary buckwheat cortex powder could significantly improve the decrease of 5-HT in colon tissue of the model mice induced by compound diphenoxylate,which may be one of the important mechanisms of its laxative effect.(5)In order to further evaluate the laxative effect of tartary buckwheat flour,the experiments of human body were carried out.The results also showed that tartary buckwheat flour had laxative and health care effect.
