With the advancement of urbanization and the improvement of people's living rhythm,cold chain food is widely popular.Fast-food boxes,as the leading force in China's catering industry,are becoming more and more popular among consumers.Although the development of cold-chain food meets people's demand for food consumption,with the rapid pace of life,how to quickly thaw,heat,sterilization of cold-chain food has become an urgent need for innovation in technology.At present,the traditional heating methods,such as hot air,water bath and steam,can not meet the market demand for quick thawing,heating and sterilization of cold-chain food because of the defects of high loss,low efficiency and long time.Therefore,as a new,safe and efficient heating method,microwave technology has been rapidly applied to the cold chain food.Chain food industry.Microwave thawing technology has been widely used in foreign food enterprises,and it is also gradually used in fast developing food enterprises in China.The thermal and non-thermal effects of microwave technology make it have a great advantage in food heating.Microwave heating is based on the principle of dielectric loss.Under the high-frequency radiation of electromagnetic wave(microwave),low-temperature materials use polar molecule vibration to produce elastic collision with surrounding molecules and friction heat,and the friction heat is generated to realize the rapid temperature return.These's based on the development of large-scale industrial thawing equipment and the development of miniaturization market of thawing equipment.It mainly analyzes the application of microwave technology in cold-chain food,discusses the design of microwave rapid heating and thawing equipment for cold-chain food and electromagnetic simulation analysis.In order to meet the needs of the market,this paper calculates the microwave power required for heating a frozen fast food box based on the parameters of the frozen and thawed fast food box at minus 18 C in the market,and establishes a three-dimensional model of the microwave cavity by using the simulation software CST,which simulates the field intensity distribution and standing wave in the microwave cavity.Then according to the simulation results,the three-dimensional model of the microwave equipment is designed by Creo software,the electrical components are selected,and the electrical circuit system is designed.A small microwave system which can quickly heat and thaw the cold chain food is completed.The system realizes the rise and fall of microwave oven door by designing restraining sheet,ensures the microwave leak in the national standard range,solves the problem of non-uniform heating,realizes the temperature difference of box meals(+5 C),and through the design of dehumidifying system,discharges the water vapor produced in time outside the chamber,avoids the reflection caused by condensation into water.And uneven heating.By studying the Miniaturized Microwave Heating system,this paper can be widely used in the fast heating and thawing of frozen food in restaurants,canteens,restaurants and other industries,and combined with the automatic food vending machine,which can be used in shopping malls,schools and other densely populated areas,and has a wide application prospect.
