In this study,a new functional drink was developed with bird's nest,tremella,peach gum and wolfberry as raw materials,determing the preparation technology,shelf life and sialic acid content of bird's nest tremella beverage,which provided a certain theoretical basis for the factory production of bird's nest tremella beverage.The main research contents and results are as follows:1.The effects of extraction time,temperature and ratio of material to liquid on the polysaccharide yield of tremella polysaccharide and wolfberry were investigated by single factor experiment.The optimal extraction process was obtained by response surface method:extraction time of tremella polysaccharide was 3h,extraction temperature was80?,and extraction liquid ratio was 1:30.For wolfberry,the extraction time was 50 min,the extraction temperature was 80?,and the extraction liquid ratio was 1:40.2.On the basis of single factor experiment results and taking the sensory evaluation as the index,orthogonal experiment was used to determine the best cooking technology of bird's nest and peach gum:the cooking time of bird's nest was 40 min,the temperature was 80?,and the ratio of material to liquid was 1:30.Peach gum boiled time 60 min,temperature 90?,material to liquid ratio 1:20.3.Based on sensory evaluation,orthogonal experiment was used to determine the optimal ratio of raw materials including tremella(7 parts),bird's nest(3 parts),wolfberry(2parts),peach gum(1 part)and rock sugar(8g/100mL).4.HPLC-PDA was used to detect sialic acid content,under these conditions,sialic acid has the maximum peak at the wavelength of 203 nm,on this wavelength,the sialic acid content of bird's nest tremella beverage prepared by this process was measured as 240.18?g/mL.At the same time,the feasibility of the experimental method is verified by the recovery experiment.5.The shelf life of bird's nest tremella beverage was predicted by ASLT acceleration method,and the shelf life of bird's nest tremella beverage at 20? is calculated as 160~190days.6.The production line of 50000 pairs of bird's nest tremella beverage per day was designed and the technology was preliminarily explored,drawing the production process,explaining the key points of the process,summarizing the quality standards of the products,preliminarily selecting the main production equipment,caculating the material demand and consumption of water and electricity.At the same time,from the site selection,the main building requirements and sanitary environment requirements of the plant,some theoretical opinions are provided for the plant planning.
