Based on the seven principles of establishing HACCP management system,hazard analysis and identified 6 critical control points were established in broiler production.The critical limit,monitor procedures,corrective measures,verification and record keeping procedures,sanitation standard operation procedures(SSOP),were also set up in broiler production.In this study,Avian broiler was used as experimental animal.The effect of HACCP system on performances,the number of bacteria in the air of broiler house and the salmonella in cloaca of broiler were obtained.The results showed that the survival rate of broiler was very significantly increased(P<0.01),the bacteria in the air of broiler house and salmonella bacteria in the chicken cloaca were decreased(P<0.05),average weight gain and feed to gain ratio of broiler tended to improve under the HACCP management system.In conclution,this study suggested that the establishment and application of HACCP management system in pollution-free broiler production not only helps solve the quality and safety problems of poultry products and the difficult problems of broiler exports,but also to create a better economic efficiency,provide high quality,health and safety poultry products for consumers.It has a broad application prospect in broiler production.
