Wheat(Triticum aestivum)is one of the most important cereal crops worldwide.China isthe largest country in the production.Wheat nutritional quality is influenced by the genetic background of cultivars and the ecological conditions of planting area.Here,we analyzed the variations of nutritional quality of wheat cultivars released from 2014-2016,to investigate the bioactive compounds content of 4 wheat cultivars planted at Chongzhou and Renshou under different treat,such as Nitrogen fertilization period,N application,NxP application and N application x sowing time to investigate the effects of cultural practices on bioactive compounds contents.The main results are listed as follows:The effect of Nitrogen fertilization period on the 3 antioxidant substances is not significant,but the study found that delaying nitrogen application can make the content of phytic acid and GABA increased.The effect of N application x sowing time on phytic acid is significant,but it doesn't influence the total phenolics and GABA significantly.The phytic acid content in grains decreased significantly on the amount of nitrogen application(150kg pure nitrogen/ha).Both Advanced and delayed sowing date made the phytic acid the content increased significantly.And we found that increasing the amount of nitrogen fertilizer(150kg pure nitrogen/ha)can improve the total phenolic content and GABA content of wheat grain.NxP application mainly affected the phytic acid content in mature wheat grain,and the increase of P application could increase the phytic acid content significantly,while the interaction between nitrogen and phosphorus promoted the content of GABA and total phenolics in grain.The phytic acid content of Mianmai 51 and Shumai 969 was low,while the phytic acid content of Shumai 482 and Chuannong 16 were higher,which was opposite to that of total phenolics and y-aminobutyric acid.Compared with Renshou area,Chongzhou region has higher phytic acid content and lower total phenolic content.There were some correlations between the three antioxidants.The content of GABA in the grains of mature wheat was positively correlated with total phenols content,but negatively correlated with phytic acid content.
