In the studies,5040 fifteen-week-old Wenchang broiler breeders were randomly divided into four groups(namely group A,B,C,D),three repeats for each group,and 420 chicken in each repeat.The chicken in group A were fed basal diet with soybean meal(48.82% CP)by 23.9%;chicken in group B,C,D were fed treatment diets with fermented soybean meal(FSM,49.12% CP)by 1%,2%,3%,which replaced soybean meal with different proportions respectively.The breeding test lasted 31 days,including advanced experiment period for 7 days and formal experiment period for 24 days.chickens were restricted feeding by 87 g each day,and had free access to water.And other breeding management followed the breeding procedures of Enping Jilong Industrial co.,Ltd.Six days before the end of the trial,336 hatching egg each two days were selected randomly to determine the hatchable egg rate.The good eggs were hatched to tested fertilization rate and other reproductive performance indexes.In the end of breeding experiment,four eggs in each repeat were used to measure egg appearance quality.And three chicken were selected randomly to slaughtered,take weights of carcass and abdominal fat,determine the pH,shear force value,inosinic acid and hypoxanthine concentration in leg and pectoral muscle respectively.The results are as follows:(1)In the reproductive performance,egg production rate of group D were significantly lower than that of group A and B(P<0.05).In the egg appearance quality,the shell thickness of group C and D lower than that of group A and B(P<0.05);there weren’tdifferent in eggshell thickness,egg shape index,Haugh unit and yolk color among four groups(P>0.05).(2)In the reproductive performance,fertilization rate of group D were significantly lower than that of group A and B(P<0.05);there weren’t different in hatchable egg rate among four groups(P>0.05),as well as hatching rate,death rate of embryo,follicular atresia and healthy young rate.(3)FSM in different extent decreased the belly fat percentage of chicken.The pH values of leg muscle in group B and C were reduced compared with group A and D(P<0.05).No response showed in meat quality of breast muscles(P>0.05).(4)Compared with AA concentration in muscle of group A,Asp,Thr,Ser,Glu,Ala,Val,Leu,His and Arg concentration in leg muscle of group C were increased(P<0.05),Gly,Cys,Met and Val concentration were increased in breast muscles of group B(P<0.05).Furthermore,Cys and Met concentration of group B were higher than that of group C(P<0.05).(5)As for the contents of major fatty acids,the stearic acid and eicosatetraenoic acid in leg muscle of treatment groups were higher than that of control group(P<0.05).But no different showed in breast muscles among four groups(P>0.05).(6)The inosinic acid content in leg muscles of group C and D were higher than that of group A and B,but the hypoxanthine got opposite results(P<0.05).The inosinic acid content in breast muscles of group C and D were higher than that of group B(P<0.05),and which of group D showed a tendency to improve compared with that of group A(P=0.08).The hypoxanthine in content in breast muscles of group C and D were higher than that of group A and B(P>0.05).The above results show that,to a certain extent,1-3% FSM used in meat and egg combination chicken decreased egg-laying performance,egg quality and fertilization rate,but improved flavor quality including flavoring amino acid,fatty acid and inosinic acid in muscles.
