During the growth process of fruits and vegetables,a huge quantity of pesticides,including organic pesticides and inorganic pesticides,were applied in order to effectively eliminate diseases and insect pests.Organic pesticides and inorganic pesticides were not only toxic to pests and diseases,but also toxic to human and livestock.In modern agricultural production,pesticides have become an indispensable and effective method to inhibit diseases and insect pests.Under the result of a variety of pesticides,it can not only effectively inhibit the incidence of plants,but also effectively inhibit the negative effects of insect pests,however,it also poses a serious threat to human health.This threat exists not only in the process of pesticide application,but also on its subsequent impact.After the application of the pesticide,it can not be effectively decomposed after exerting its due role,and will continue to play an undue role in agricultural products after the harvest.Therefore,it is becoming more and more important to develop a technology that can effectively degrade pesticide residues without changing the original state of fruits and vegetables.High voltage pulsed electric field(HPEF)is a new non-thermal-treatment technology.Currently,liquid and semi-solid materials can be treated with higher electric field strength(10-50kV/cm),shorter pulse width(0-100 us)and higher pulse frequency(0-2000Hz).When the pulsed electric field acts on the pesticide,it accelerates the movement in molecules and higher energy was gained,which increases the molecular bond energy and causes the molecule to enter the unstable state,resulting in the breakage of its chemical bond and the formation of a new nontoxic substance.The application of high voltage pulsed electric field in the removal of pesticide residues embodies high research value.At present,the application of HPEF in vegetables and fruits has not been so widely used as juice,beverage and other liquid materials.The domestic research on high voltage pulsed electric field technology is still in its infancy,and many uses in the process of fruit and vegetable treatment have not been fully developed.This is mainly due to the lack of appropriate processing chamber for solid food.In this paper,a flow-lined processing chamber and its matching electrodes are designed,which effectively solve the design defects of the existing processing rooms,improve the working efficiency of the high-voltage pulsed electric field,and make it more convenient to connect with industrial mass production,by carrying out the following research:1.The introduction of the theory of electromagnetic field.2.The best effect of HPEF on pesticide residues in fruits and vegetables.3.Design of the structure model of HPEF electrodes and its supporting processing chamber by Solidworks software.4.The Ansoft EMF simulation software is used to simulate the proposed three kinds of processing chamber structure in the ideal condition,and select the best electrode structure.5.Using COMSOL multi physics field simulation software,the optimum electrode structure is simulated under the ideal condition of adding air and water vapor,and the treatment effect is demonstrated.
