| Water bamboo shoot is crisp and tender.It tastes delicious and nutritious.It can also be used medicinally.However,water bamboo is not easy to store,and it is prone to yellowing,hollowness and lignification.Therefore,it is great significance to study the storage and preservation of water bamboo after harvest.In this study,water bamboo shoot was used as experimental material to study the effect of PE packaging on the storage quality and lignification after harvest.And the best PE packaging thickness was determined.On this basis,ozone treatment with modified atmosphere packaging was used to study the quality change and lignification process of water bamboo during storage.It provided technical support for the preservation technology of water bamboo after harvest.The results were as follows:(1)Water bamboo was separately packagingd in PE packaging of 0.02 mm,0.04mm,0.06 mm and 0.08 mm,and then stored at low temperature.The results showed that PE packaging could consumethe O2 and theincrease of the CO2 volume with the increase of thickness of PE packages.After 60 days of storage,WH of each group were 55.25,57.75,60.91,59.45.Compared with other thicknesses,PE bags(0.06 mm)could keep the colour of water bamboo better.At the end of storage,the lignin content of water bamboo increased to 3.24%,2.70%,1.84%and 2.30%,which 0.06 mm PE packaging could delay the increase of lignin content.Packaging with PE bags(0.06 mm)could maintain the activities of polygalacturonase and cellulose and delay the increase of polygalacturonase and cellulose activities.Thus it delayed the lignification process of water bamboo during storage.(2)The effects of ozone treatment with Modified Atmosphere Packaging(MAP)on postharvest storage quality and lignification of water bamboo were studied with the best thickness of 0.06 mm PE packaging.Different concentrations of ozone(3 ppm,6 ppm,9ppm and 12 ppm)were used for treatment.The results showed that the surface hardness of CK group decreased from 5.95 kg/cm2to 3.11 kg/cm2.The treatment groups were 1.09,1.26,1.34 and 1.15 times of CK group,indicating that ozone treatment could delay the decline of surface hardness.The results showed that ozone treatment could delay the decrease of colour,TSS,total sugar and soluble protein content of water bamboo and maintain a good color.Studies on Lignification showed that ozone treatment could inhibit the increase of lignin,cellulose and pectin content,slow down the increase of phenylalnine ammonialyase and peroxidase activities,maintain higher polygalacturonase and cellulose activities,and slow down the lignification process.Among the four concentrations,9 ppm treatment was the best. |
