China is a big country in agriculture,relying on its own power to solve the food problem of two-thirds of the population in the world.Rice is very important on food production,to ensure the safety and quality of rice is to ensure people's health and well-being.There is usually a gap between the starch grains in the endosperm of rice,and the penetration of rice is not consistent,which results in the formation of transparent and opaque regions in the endosperm,among which the opaque part is called chalkiness.The proportion of chalkiness to the whole volume of rice is called chalkiness.The chalkiness detection is directly related to the quality evaluation of rice appearance.Good chalkiness measurement method will directly affect the accuracy of rice appearance quality.At present,the measurement of rice chalkiness is based on two-dimensional images.The main research content of this paper is to use terahertz imaging technology to scan and generate rice cross-section images,and then convert them into three-dimensional images.Finally,the method to improve the precision of rice chalkiness determination was discussed.The main work of this paper is as follows: Firstly,using the technology of terahertz imaging to image the sampled rice samples and generate the image data.Secondly,using MATLAB technology to preprocess the generated images,to restore the distorted images by objective factors as far as.Thirdly,as possible to change the two-dimensional rice cross section map to the three-dimensional graph.Lastly,to determine the rice chalkiness.The experimental results show that this method can achieve rice chalkiness measurement based on three-dimensional images and improve the accuracy of chalkiness determination.
