Research On The Quality Of Donkey-hide Gelatin In The Changzhi Market

The purpose of this study is to investigate the market situation and the quality of the donkey-hide gelatin in ChangZhi.By sampling survey method detecting the quality of circulation in the city,and using head-space solid-phase microextraction and gas chromatography/mass spectrometry(SPME/GC-MS)technology,we analyze the composition and content of volatile substances in gelatin.The following conclusions are drawn:1.13 kinds of main Amino acid are detected in the gelatin kinds of Changzhi city,for example,Threonine acid and Serine acid,among them,the most part is Glycine acid.2.There is relatively high iron content in donga glue,but the content of copper,cobalt and nickel is relatively low.The content of copper,cobalt and zinc in tong ren tang is relatively high,but the content of iron and manganese is relatively low.The content of zinc in HuaXin is relatively low.3.There are 42 volatile substances detected in glue,including aldehydes,alcohols,heterocyclic classes,ketones,alkanes,acids and esters.Containing of 14 kinds of aldehyde material.Conclusion:(1)The comprehensive quality is higher in famous brand such as donga glue,people need to choose appropriate product according to their own needs.(2)The special odour of glue provide the basis of evaluating the quality and market normalization of glue.
