With the rapid development of economy and the advancement of science and technology,competition has become a topic that companies have to face.Consumers' demands are increasingly diversified.The products on the market are more luxuriant and more attention is paid to the product quality.There is no good sales performance for products without excellent quality.DS company,as a company processing products,is trying hard to improve the quality and quality of its products.It has been in the leading position in the industry for many years.This article takes DS company as the research object,takes the HACCP management system as the theoretical basis,adopts the method of on-the-spot research of the company,and rectifies the production line of buckwheat tea in DS company.GMP standards and SSOP procedures were used to improve the food-related health standards in DS company's plant environment and production processes.After the preliminary preparation work was completed,the properties of buckwheat tea products were described and the production process flow charts were drawn.Develop HACCP implementation steps based on the production flow chart to identify potential hazards during processing.Through the entire process of monitoring and analysis of the DS company's production process,eight key control points,namely,raw material purchase,screening,grading,soaking,cooking,drying,sterilization,shelling,packaging,and finished product storage,were identified as eight key control points.Based on this,it sets the appropriate critical limits.Evaluation of the effect before and after the application of HACCP system by DS company found that the failure rate of raw material acceptance before and after the implementation of the HACCP system decreased significantly,and the number of consumer complaints dropped from 7 at the beginning to 1.DS company implementation of the HACCP system,can effectively control the unsafe factors in the food production process,prevent food insecurity incidents,to ensure the quality of the company's food,so that the quality management system of tartary buckwheat tea is also more scientific and reasonable.
