As people's living standard and consumption ability growing,people's consumption concept of leisure food has been gradually transformed from subsistence type to more nutritional and functional one.Bacterial cellulose,as a kind of bacterial polysaccharides and dietary fiber,has a many of unique functions to human body,for instance,digestive function enhancement and anti-aging.By adding bacterial cellulose to leisure food,this thesis mainly based on the theory of bacterial cellulose molding technology,and further studying on the following aspects:(1)The bacterial cellulose technology is using Han's Gluconacetobacter isolation and identification in the laboratory by the fermentation production.The activation of inoculation in the seed liquid expanding culture and then access the fermentation medium,different matrix materials are added in the fermentation broth,shaking stronger adsorption capacity has more beautiful appearance of particle diameter of o.1cm-2cm spherical bacteria cellulose and core diameter of chrysanthemum of bacterial cellulose 0.5cm-lcm.(2)The application of molding of bacterial cellulose in leisure foods,which could get rich in bacterial cellulose 5%drinks,rich in 3%bacterial cellulose yogurt,which contains 10%bacterial cellulose sausage.(3)Harbin the Great Northern Wilderness Shuanghui food Co.Ltd.,Kerry(Harbin)Food Industrial Co.Ltd.,Kangshifu top Holdings Harbin Yi/Tingyi food company,Harbin Longdan Limin Dairy Co.,Ltd.,four enterprises have been visited,with in the approval of the forming technology of bacterial cellulose.They put forward the problems in technology,value cooperation mode,and summarized to enlarge the application range,small scale production and operation,technical value assessment,and established the cooperation mechanism of distribution of interests.The fair implementation of scientific research personnel incentive system solutions has been established.More,application of this technology makes the analysis of economic benefits,the design estimate,yogurt beverage with rich bacterial cellulose,sausage the annual production was 500 tons,500 tons,150 tons,bacterial cellulose was added to the 3%-10%project.The annual profit is 4,390,000 yuan respectively,3,640,000 yuan,and 4,915,000 yuan.(4)Over through the marketing research,it could be found that 82.41%of respondents did not understand the bacterial cellulose rich food.While,more than 94%of the respondents are willing to try to buy that kind of products,the leisure food safety,taste,nutrition quality at the same time.We should properly control the leisure food prices to meet the needs of consumers.
