Zhou li recorded a large number of food officials and constructed a strict and systematic system of food officials.The food culture thought contained in it has an important guiding role for the development of food culture in later generations.However,through a comprehensive review of the historical literature,the lack of food culture in the "rites of zhou",so that it is a great shame.On the basis of previous studies,starting from the text of "zhou li" and supplemented by literature materials,this paper sorts out the food in "zhou li" and explains its cultural significance.Taking zhou li as the research object,this paper is divided into introduction,text and conclusion,including three chapters.The introduction summarizes the significance and basis of the topic,research status,research focus and difficulty,research methods.The text introduces the food culture in zhou li from three aspects: food official system,food materials and food utensils.In the first part,the food officers in the rites of zhou are divided into four categories: those who supply food materials,those who process and make food,those who provide food service,and those who are in charge of food utensils.In addition,the functions of various food officers are verified and sorted out.From the characteristics of large number and high status of food officials in zhou li,we can see the importance of food officials' position in the official system of zhou li.The functions of each food officer are intersected so that they can cooperate with each other.There is a subordinate relationship between the functions of food officials,which ensures the orderly progress of food activities.The concept of diet proposed in the food official system of zhou li has been used in later generations.The system of food and medicine in the rites of zhou also provided precedent for later generations.The second part introduces the dietary materials and their characteristics in zhou li.The ingredients in zhou li,Cereal is given priority to with "six grain",the flesh can cook for board,thick soup,sauce,in order to offer edible.Drinks are divided into liquor and liquor.There are "wuqi" and "sanqi"."wuqi" is turbid due to filtration,and "sanqi" is clear after filtration."Zhou li" in food material take use and process,reflecttwo characteristics: it is to choose a principle according to the circumstances,the choice of food should follow the change of the season,food and climate should be consistent.Two is the cooking way of five flavors harmonization,the cooking of food to harmonize five flavors,suitable fire and water.The third part analyzes the shape,function and use system of food utensils in zhou li.Food vessels mainly include ding,persecutor,fu and GUI,while wine vessels mainly include jue,zun and yi.Originally,these vessels only had the function of carrying food materials and drinks.As they were mostly used in sacrificial occasions,the number of them symbolized the hierarchy,so they were endowed with the function and significance of ritual vessels.The conclusion summarizes the content of the paper and reaffirms the main points of the paper.
