Food is the general element of human survival and development.Food safety is an important precondition of ensuring people's health,which is a major livelihood issue and deserves to pay high attention to.The illegal additive in food is one of the major reasons leading to food safety issues.Without science verification and risk assessment,the non-food substances could cause big healthy and quality safety issue if it been added into food illegally.Therefore,it is badly in need to establish a detection method for multiple illegal additives in food.Due to the large numbers and varieties of illegal additives,an innovative screening model that combines target screening with non-target screening is needed during the test to accomplish both qualitative and quantitative analysis.In this study,the veterinary drug residues were chosen as the screening target in animal-derived food and the 82 illegal additives were chosen as the non-target screening range in food samples.The above two screening strategies were explored for providing the rapid screening analysis of related projects with good practical value.The main research contents are including as bellow:The chapter 1 gives an overview of illegal additives in food,outlines the screening model of illegal additives in food and summarizes the research status of the target screening of multi-residue of veterinary drugs in animal-derived food as well as the non-target screening of illegal additives in food.Then,sifnificance of the study was introduced.The chapter 2 is on the establishment of a LC-MS/MS target screening method coupled with solid-phase dispersion extraction for 13 classes of 42 veterinary drugs in 4 animal-derived food(pork,beef,pork jerky and beef jerky).This method is rapid,simple,sensitive and is suitable for the simultaneous determination of the 42 veterinary drug residues in animal-derived food.In chapter 3,a LC-Q-TOF non-target screening method was developed for 82 illegally added chemical drugs in hydrous food,high-fat food,and high-protein food.Meanwhile,the 82 mass spectrometry information database for illegally added chemical drugs was set up as well.The strategies of non-target screening and qualitative confirmation for actual samples were explored.This method is rapid,simple,accurate.The database is opened and the sample pretreatment method has certain universality.Therefore,the method is suitable for non-target screening of various illegal additives in food.
