As necessities to life,fresh products play an indispensable and important role in people's daily life.With the development of economy and the increasement of people's income,people's living standard has been improved,which leads to the change of consumption pattern.Consumers not only pay attention to the quality and safety of goods,but also pay attention to fairly good consumption experience.Fresh supermarkets operated by standardization are becoming an important channel for consumers to buy fresh products.However,at present,the cost of frozen storage and transportation is relatively high in China.Fresh products,as a kind of wearable products,will suffer losses of quantity and quality in transportation and sailing.Supermarkets operating fresh products,will also face problem of stochastic supply and demand.On the one hand,previous demand forecasting methods can not fully meet the characteristics of fresh products,which result in inaccurate demand forecasting;on the other hand,fresh products are easily affected by season,weather and many other factors,so suppliers are unable to determine demands.In addition,the current inventory management level of fresh supermarkets is relatively low.The backward inventory management mode causes a considerable loss of fresh food and increases operating costs.Therefore,it is of great significance to study the decision-making and inventory control of fresh products in order to maximize the profits of supermarkets.Firstly,this paper briefly introduces the characteristics of fresh products,related ordering strategies and warehousing management theory.It analyses the main factors influencing the purchase decision of fresh products,and expounds the basic methods and tools for the study of fresh products purchase.Based on the newsboy model,considering the characteristics of wear and tear and the randomness of supply and demand,this paper studies the optimal purchasing decision of supermarkets to maximizing the expected profits of supermarkets under the single supplier mode.Secondly,on the basis of inventory theory,this paper scientifically and systematically analyses the current situation and existing problems of SF fresh supermarket inventory management,combines the actual situation of SF fresh supermarket with ABC classification management method,and puts forward optimization plans and suggestions for this problem,through the combination of theoretical analysis and case analysis.Finally,the optimized inventory management scheme based on the optimal decision-making model will be applied to the operation of fresh supermarket.It is tested by simulating the actual operation data of fresh supermarket.The reference of the inventory management model is expounded through the key indicators such as loss rate,shortage rate and profit rate.
