Eel is a kind of aquatic products which is full of nutrition.Eel product is also one of the favorite foods for people around the world.The frozen roasted eel is made by killing,gutting,boning,and trimming the live eel,and then through boiling,roasting,and freezing,after which it should be stored and delivered at a temperature of 18?.Frozen roasted eel is one of the main export products in our country.The research on the production safety of the frozen roasted eel is conducive not only to the economic development of China,but also to the industrial upgradation of frozen roasted eel in Fujian.Besides,it is conducive to the further development of enterprises,to make them bigger and stronger.Though data access,on-site visit to eel farms and plants and the communication with the on-line production managements,the paper shows us the present situations of eel farming and frozen roasted eel processing industry,and analyses the development advantages and restricting factors of them.The paper focuses on the control technologies for safe production of frozen roasted eel.Its production starts from breeding,and then sorting,processing,transporting,and ultimately ends in delivery to customers.In this process,various safety control methods are used to eliminate the significant safety hazards to frozen roasted eel,so as to minimize the hazards that customers can accept it.After data access,on-site visit to eel farms and plants and the communication with the on-line production managements,combining with the actual situations of frozen roasted eel plants,we established a scientific safe production prevention and control system that can guide the smooth production of frozen roasted eel.We have applied hazard analysis and critical control point ideas in devising the system,and can guarantee that operational norms and hygienic regulations are perfectly met.The ultimate purpose of this paper is to provide reference for establishing and implementing whole-process quality control system for frozen roasted eel industry in our province,and to guide its safe production.It will effectively lower the risk for frozen roasted eel industry and drive the healthy and sustainable development of frozen roasted eel industry.
