With the rapid development of economy,the ecological environment of aquaculture water area is deteriorating day by day,and the quality and safety of aquatic products are seriously affected,among which heavy metals have attracted much attention due to their high toxicity and persistent pollution.Fujian is one of the main production areas of cultured shrimp.In order to evaluate the status of heavy metal pollution of cultured shrimp,this paper conducted sampling survey of 5 heavy metal pollution in 6 breeding shrimp bases in different regions of Fujian province,and conducted feature analysis of heavy metal content and dietary exposure risk assessment.Main research contents are as follows:1.In this paper,the ningde,Fuzhou,putian city,Fujian province,zhangzhou,quanzhou five areas of shrimp breeding base of 6 ZhongYangShi shrimp,crayfish,South America white shrimp,Japan giant freshwater prawn,penaeus chinensis,the new prawn the pipe whip shrimp,knife)for five kinds of heavy metals(Cd,Pb,Hg,As,Cu)pollution of sample collection and investigation,evaluation standard,according to the country for the domestic aquatic products of heavy metals using single factor variance analysis and LSD multiple comparison analysis method for different varieties breeding of Fujian into shrimp characteristics of heavy metal content in muscle tissue for analysis.The results showed that the average heavy metal content of cultured shrimp products in Fujian was not over the standard limit,but there were samples with excessive Cd and Pb contents detected,with the overstandard rate reaching 3%and 7%,the overstandard rate of Pb contents in Japanese biogas shrimp was 9%,and the overstandard rate of Pb heavy metals content in new prawn was 12%.The average contents of Cd,Pb,Hg and As were the lowest in South America,which was related to the low pollution of breeding environment and the low concentration coefficient of heavy metals.2.In this paper,the heavy metal content in different tissue parts of cultured shrimp of the same species(liver,pancreas,gills,shells removed from gills,muscles)was measured.The results showed that the contents of heavy metals in the liver,pancreas and gills of shrimp were generally higher than those in other parts of the body,and were more than twice as high as that of the muscle tissue.This is because the liver and pancreas of shrimp are its main digestive and metabolic organs,while the gills are its main respiratory organs,which are in direct contact with the complex water environment for a long time.It is recommended to remove liver,pancreas and gills as much as possible when eating or processing shrimp products.3.This article USES the method of single factor pollution index(Pi)evaluation of Fujian aquaculture shrimp some kind of heavy metal pollution levels,use to comprehensive pollution index comprehensive evaluation of different varieties of Fujian aquaculture shrimp edible part of the overall situation,heavy metal pollution by heavy metals can tolerate exposure risk evaluation and heavy metal target quotient(THQ)evaluation method of risk and non cancer hazard index(HI)analysis assessed the farmed shrimp products in Fujian province of dietary intake of heavy metals in edible parts exposure risk.The results show that:(1)the Pi values of Hg,As and Cu of different species of cultured shrimp in Fujian were all less than 0.6 and within the scope of light pollution.The maximum Pb single factor pollution evaluation indexes of biogas prawns,prawns prawns and crayfish were all over 1,while the single factor pollution evaluation index and nimerro comprehensive pollution index were around 0.7,which was in the moderate pollution level.(2)the average content of heavy metals to calculate area residents per week actual intake of heavy metals(AWI)cases,5 kinds of heavy metal Cd,Pb,Hg,As,Cu weekly intake per capita per week of harmful heavy metal tolerance intake(PTWI)than are far less than 1,in the area of Fujian province shrimp products,because of the heavy metal Cd,Pb,Hg,As,Cu average consumption caused by low risk,shrimp products safer.However,when AWI was calculated with the maximum amount of heavy metal,the highest amount of heavy metal Hg per capita in shrimp products in Fujian province was more than 1,which reached 102.381%,so the consumption risk of heavy metal Hg was relatively high.(3)THQ values of 5 heavy metals in cultured shrimp products in Fujian were much smaller than 1,indicating that the health risk of consumption of Cd,Pb,Hg,As and Cu heavy metals in cultured shrimp in Fujian was low,and THQ values were ranked As>Cu>Cd>Hg>Pb from small to large.(4)among the five heavy metals of cultured shrimp in Fujian,As contributed the highest,42.067%,followed by Cu,22.284%.As and Cu of cultured shrimp in Fujian may have potential health risks to human body.
