In this paper,natural wax(rice bran wax,beeswax and carnauba wax)and vegetable oil were used as raw materials to make oleogels.The feasibility of oleogels to replace commercial shortening was evaluated by analyzing the relationship between the crystal properties and physical properties of oleogels.The chemical composition of natural wax was analyzed.Rice bran wax was composed of higher fatty acids(C16-C30)and higher fatty alcohols(C20-C40).C16-C28 higher fatty acids and C16-C40 long-chain fatty alcohols formed carnauba wax.Beeswax had a shorter carbon chain than the first two natural waxes,which results in lower hardness at room temperature.The carbon chains of higher fatty acids were C16-C26 and the long chain fatty alcoholswere C18-C40.The effect of different cooling rates on the quality of oleogels was studied.The results showed that the crystal size crystallized at a rate of 10?/min was smaller than that crystallized at a rate of 1?/min.All samples were ?'-type crystals,and the crystal domain size of the rapidly crystallized oleogels crystals differed from the slow crystallization by a maximum of 2.9 times.The higher the content of rice bran wax in the oleogels,the higher the melting point of the oleogels.The rapid crystallization made the oleogels network stronger and harder.In all cases,the G'value of the sample was higher than the G" value,and the G' value of the rapid crystallization was greater than the G' value of the slow crystallization.Therefore,rapid crystallization made the oleogels had better physical properties.Compared the crystallization characteristics of rice bran wax oleogels and other natural waxes,we found that rice bran wax oleogels had single needle-like crystals,while beeswax oleogels and carnauba wax oleogels coexist in different crystal forms.XRD results showed that the three oleogelss are all ?'-type crystals.Rice bran wax oleogel had a narrow DSC melting range(65.25?-74.25?),beeswax oleogel(30?-57.75?)and carnauba wax oleogel(58.25?-82.5?)showed a wide melting range of DSC.The reason was that the composition of rice bran wax was single,and the composition of beeswax and carnauba wax was complex.The dynamic rheological results showed that the three oleogels had certain solid properties,but the crystal network was easily damaged by shear forces,and had significant shear thinning and partial structure recovery capabilities.The oil retention results were carnauba wax>rice bran wax>beeswax.Rice bran wax oleogels had the strongest antioxidant capacity.Used the ternary mixed oleogels to prepare cookies,the results of the sample 1:2 had the highest score(75.62 points),and the total score was higher than the shortening,which showed that the ternary mixed oleogels can replace the shortening functionally.
