Mead is a kind of low-alcohol wine produced by fermenting honey after being diluted with water.The nutrition and health-care function of mead is highly respected in literature with a long history at home and abroad.So far,the relevant research of mead has mainly focused on the detection and analysis of the composition of mead,the improvement of mead brewing technology and the development of new special mead,and there is no relevant report to study the function of mead.In this study,jujube-flower honey was used as the research material,and a preliminary study on the function of jujube-flower honey was conducted.The research content mainly includes and parts:(1)We completed the brewing system of jujube-flower honey wine products under laboratory conditions,and tested various physical and chemical indicators of jujube mead wine.The results showed that the safety indicators of homemade jujube-flower honey wine meet the national standards standard.Jujube-flower honey wine was rich in nutrients and was a good source of amino acids,minerals,vitamins and selenium.We confirmed the effect of the fermentation process on the total phenol content of jujube-flower honey.Our research also confirmed the material changes before and after fermentation of jujube-flower nectar,providing a reference for the production of jujube-flower honey wine.(2)Through animal experiments,the effect of long-term intragastric administration of jujube-flower honey wine on the growth and main liver function of mice was evaluated.The 70-day chronic gavage experiment of j ujube-flower honey wine was studied in this study,and the effects of different doses of jujube-flower honey wine on growth trend,liver index,kidney index and spleen index were observed.We evaluated liver function indexes and kidney function indexes of mice after the test and analyzed pathological sections of liver,kidney,heart,spleen and other organs of mice to determine the damage caused by chronic intragastric administration to the organs of mice.Comprehensive analysis suggested that the long-term chronic gavage of jujube-flower honey wine did not seriously affect the health of mice.(3)The study focused on the effect of jujube-flower honey wine on the liver of mice.In this experiment,the CCL4 acute liver injury model was used for the study.Determine mouse liver damage by assessing mouse body weight,liver index,serum alanine aminotransferase(ALT),and serum aspartate aminotransferase(AST),liver tissue malondialdehyde(MDA),and liver pathological sections,and other key indicators.The apoptosis of mouse liver tissue was examined by terminal deoxynucleotidyl transferase-mediated nick end labeling(TUNEL),and the protein expression of mouse liver tissue was detected by Western blot.After the acute liver injury of CCL4,the liver of the mice treated with mead had a similar apoptotic situation compared with the CCL4 model group,but the cell necrosis was significantly relieved.At the same time,Western blot detected that in the liver tissue of mice drinking mead,the expression of TNF-? and TLR-4,which are related to the inflammatory response,was significantly reduced,while that of PCNA,which was related to the proliferation,was significantly increased.This indicates that mice that drink jujube-flower honey wine have a lower inflammatory response after CCL4 treatment and a higher ability to regenerate and repair liver tissue.Drinking jujube-flower honey wine increased mice's ability to tolerate CCL4 liver injury.
