This research mainly includes the following three parts(1)Simultaneously determine the physical and chemical quality indicators of the prepackaged snail powder chili oil package based on the infrared spectrum angle measurement model: use the direction certainty of the vector to convert the spectral intensity measurement into a spatial angle measurement,and reconstruct the infrared spectrum of the chili oil with acid value and refractive index The linear relationship between the rate and peroxide value is established to establish an analysis model of the infrared spectrum and key quality indicators of chili oil.The results show that: the correlation coefficients of the acid value correction set and the verification set are 0.9936,0.9959,the root mean square error is 0.0282,0.0264;the refractive index correlation coefficient is 0.9925,0.9907,the root mean square error is0.000132,0.000147;the peroxide value correlation coefficient is 0.9923,0.9421,The root mean square error is 0.0176 and 0.0843.Finally,four kinds of pre-packaged snail powder were selected for verification.The root mean square errors of the three indicators were 0.0185,0.0001,and 0.0355,which were better than PLS,indicating that the angle measurement model has good predictability and stability.(2)Fast analysis of sodium dehydroacetate in the pre-packaged snail powder powder package:The rice cakes in the pre-packaged snail powder use rice(or brown rice)as raw materials,and add(or not add)edible starch raw materials as auxiliary materials.Prepared dry rice noodles,modulated dry rice noodles and brown rice dry rice noodles.Take five different brands of pre-packaged snail noodles as the research object.Establish a background database without sodium dehydroacetate by combining High performance liquid chromatography-ultraviolet spectroscopy with vector subspace,and collect the ultraviolet spectra of standard sodium dehydroacetate to establish a standard database,establish a mathematical model,and quickly analyze the dehydrogenation contained in rice noodles The content of sodium acetate.The experimental results show that the content of sodium dehydroacetate has a good linear relationship r=0.9997.Compared with the results of liquid chromatography,the relative error is basically less than 5.45%,the precision measurement result is less than 2%,and the recovery rate is 96%?116%.between.(3)Simultaneous determination of preservatives in pre-packaged snail powder and pickles:This study combines High performance liquid chromatography-ultraviolet spectroscopy and vector-subspace to establish a method for sodium benzoate contained in sour bamboo shoots and pickles in pre-packaged snail powder.Quick determination method for potassium acid and sodium dehydroacetate.Separate samples through liquid chromatography-ultraviolet spectroscopy,establish a background database without the components to be tested,and collect the ultraviolet spectra of preservative standards with a certain concentration gradient as the standard database,and finally establish the mathematics of three indicators The model calculates the content of the preservative to be tested in the sample through vector deduction.The results show that the content of the three preservatives calculated by this method is similar to the results of the liquid phase measurement,and the relative errors are mostly within 5%.The recovery rates of sodium benzoate,potassium sorbate,and sodium dehydroacetate are 94%?104%,90%,respectively.%?106%,83%?106%;the precision is less than 2.3%,this method is simple and quick,and can be used for mass detection.
