| Crucian carp,as a kind of omnivorous fish,is an important aquaculture fish in China,and is popular with consumers in China.In this study,in order to explore the cultured economic value and muscle nutrition of Zhongke No.5 crucian carp that introduced by our province and local excellent crucian carp(Pengze crucian carp),we selected the " Jiangxi province bulk freshwater fish industry technology system Ganzhong district technology test and extension station " in Lefeng Town,Poyang County,Jiangxi Province for the experiment in Zhongke No.5 crucian carp and Pengze crucian carp breeding.Each kind of crucian carp was cultured in three ponds with the same size and an area of 16(666.67 square meters);the aquaculture model was mixed culture of crucian carp and grass carp in the ratio of 3:2,with 30000 crucian carp and 20000 grass carp in each pond.Breeding and management conditions were the same.After 16 months of mixed culture,the economic value was evaluated.During the culture period was 3-5 months,the physique indexs were determined and the nutritional componerts of muscle value were compared.After 16 months of polyculture,drain the ponds,the economic value of the two kinds of crucian carp was evaluated.The results showed that: the average yield of Zhongke No.5 crucian carp was 550 kg /(666.67 square meters),and that of grass carp was 3000 kg /(666.67 square meters);the yield of Pengze crucian carp was400 kg /(666.67 square meters),and that of grass carp was 2500 kg /(666.67 square meters).The average yield and total yield in the mixed breeding ponds of Zhongke No.5 crucian carp and grass carp were higher than those in the mixed breeding ponds Pengze crucian carp and grass carp.The experimental data showed that,the ponds with mixed breeding of Zhongke No.5 crucian carp had higher economic value.During the culture time 3-5 months,the body weight,body length and body height data were measured every half month,the physique mass index,mineral elements,amino acid content and composition,fatty acid content and composition of the two kind were evaluated for 6 times.The results showed that the final body weight and length of Zhongke No.5 crucian carp were significantly higher than those of Pengze crucian carp(P < 0.05),but there were no significant differences in meat conten;visceral physique index,empty shell rate,fatness and water content was no significant difference.The ash content in muscle of Zhongke No.5 crucian carp was significantly lower than that of Pengze crucian carp(P < 0.05),and the fat content was significantly higher than that of Pengze crucian carp(P < 0.05);there was no significant difference in trace mineral element Zn between Zhongke No.5 crucian carp and Pengze crucian carp,but the mineral elements Fe?Ca and Mg were significantly higher than those of Pengze crucian carp(P < 0.05).There were 16 kinds of amino acids in the muscles of Zhongke No.5 crucian carp and Pengze crucian carp,and the total amino acids were 16.95% and 14.98% respectively.The contents of TDAA in the muscles of the two kind of crucian carp are 7.29% and6.48% respectively.The ratio of total semiessential amino acids to total amino acids(TSEAA / TAA)in muscle of Zhongke No.5 crucian carp was lower than that of Pengze crucian carp.The amino acid score(AAS)and chemical score(CS)of the two crucian carp were compared.The results showed that the first limiting amino acid in the muscle of Zhongke No.5 crucian carp and Pengze crucian carp was cysteine,and the second limiting amino acid was methionine + tyrosine + histidine.The EAAI of Zhongke No.5 crucian carp and Pengze crucian carp were 106.29 and86.73 respectively,and the F values were 2.83 and 2.89 respectively.20 kinds of fatty acids were detected in the muscle of Zhongke No.5 crucian carp and 22 kinds of fatty acids were detected in the muscle of Pengze crucian carp.The content of C16:0 in the muscle of Zhongke No.5 crucian carp was higher than that of Pengze crucian carp,and the content of C18:1n9C and C18:2n6C in the muscle of Zhongke No.5 crucian carp was also higher than that of Pengze crucian carp(P > 0.05)the difference was not significant.The content of saturated fatty acids in Zhongke No.5crucian carp and Pengze crucian carp was 19.30% and 15.87% respectively,the content of monounsaturated fatty acids was 17.37% and 13.95% respectively,and the content of polyunsaturated fatty acids was 55.01% and 49.37%.In conclusion,compared with Pengze crucian carp,Zhongke No.5 crucian carp has higher economic benefits and nutritional value. |
