Sodium ascorbyl phosphate is a kind of ascorbic acid derivative with stable physical and chemical properties.After being absorbed into human or animal body,it can be rapidly dissociated by phosphoesterase,giving full play to the unique biochemical functions of ascorbic acid.However,when sodium ascorbyl phosphate is used in the production,its stability will decrease after being dissolved in solutions and its color will gradually turn yellow with the extension of storage time.In this paper,the color change rule of oral care products containing sodium ascorbyl phosphate at different temperatures was studied,and the color change rule model was fitted.Furthermore,the mechanism of discoloration was studied by HPLC and Raman spectrum,and the degradation path and cause of discoloration were further explored.Finally,the thermal degradation dynamics through the relationship between sodium ascorbyl phosphate and time at different temperatures was studied,it is concluded that the thermal degradation kinetics was shown to follow second-order kinetics,finally a thermal degradation prediction model was established and successfully fitted to the experimental data,the model provides a train of thought for all kinds of compound content in the chemical reaction process build up the forecast model.In addition,this paper studies the effect of different conditions(initial concentration,temperature,p H,light and oxygen,metal ions)on the stability of sodium ascorbyl phosphate.And through literature research,five suitable antioxidants were selected and added to the solutions.According to the experimental results,the antioxidants could inhibit the degradation of sodium ascorbyl phosphate in the solutions effectively.This study provides a theoretical basis for further understanding of sodium ascorbyl phosphate in practical production and application,and provides meaningful technical guidance and effective solutions for improving its stability in solutions.
