Cerasus humilis also known as calcium fruit,is a unique third generation of small fruit in China.The content of calcium is high,which is called green"natural calcium powder"and"calcium fruit".The contents of polyphenols,vitamins,minerals,amino acids and unsaturated fatty acids were higher than those of common fruits.However,the fruit has the characteristics of short storage period,difficult to preserve and so on.China's research on Cerasus humilis processing is in the stage of continuous improvement,the existing processing products are too single.If you want to solve the problems of storage and transportation,you can dry it and protect nutrients.On the one hand,it makes up for the short board which is not easy to store and transport,which leads to the limitation of popularization,on the other hand,it provides technical means and theoretical basis for the industrial production of Cerasus humilis juice powder:(1)Enzymatic method was used to improve the juice yield of Cerasus humilis juice.The results of enzymatic hydrolysis showed that the optimum technological parameters were as follows:the content of Pectinase was 0.04,the heat preservation temperature was 50?,the time was 60 min.,the juice yield was taken as the evaluation index,the single factor test was carried out,and the difference analysis and variance analysis were carried out by orthogonal test Under this condition,the comprehensive value is the highest,that is,the juice yield is the highest,which is 56.8.(2)Spray drying process was used to dry Cerasus humilis juice,Determine the optimal process parameters for the auxiliary desiccant and drying process.The results of spray drying showed that the better addition of Cerasus humilis spray drying juice powder was 20%maltodextrin and 1.5%sodium carboxymethyl cellulose.Based on the concentration rate,vitamin C content and sensory values,Single factor test,Combined with response surface analysis,The results show that the influence of powder concentration on Cerasus humilis spray drying juice is as follows:feed concentration>inlet air temperature>creep pump speed>inlet air flow;The influence degree of vitamin C content is:feed concentration>inlet air temperature>peristaltic pump speed>inlet air flow;Sensory value influence degree is:feed concentration>peristaltic pump speed>inlet air temperature>inlet air flow.The optimal process parameters are inlet air temperature 135?,inlet air flow 35 Hz?peristaltic pump speed9.5 r/min?feed concentration 6.35.The content of vitamin C was 346.27 mg/100 g.30.42%and346.27%respectively.(3)The vacuum freeze-drying process was used to dry Cerasus humilis juice to determine the best process parameters.The results of vacuum freeze-drying showed that the freeze-drying rate was used as the test index,the single factor test was carried out,and the response surface analysis method was used.The order of influence of freeze-drying rate was as follows:loading>sublimation drying temperature>sublimation drying vacuum>analytical drying temperature>analytical drying vacuum.The optimum technological parameters of vacuum freeze-drying for Cerasus humilis juice powder:sublimation drying vacuum degree 45 Pa?sublimation drying temperature 38?,analytical drying vacuum degree 23 Pa?analytical drying temperature 55?and loading capacity 7.00 kg/m~2.According to the above process parameters,the freeze-drying rate of Cerasus humilis vacuum freeze-drying juice powder is 4.55%/h.The results show that the freeze-drying rate of Cerasus humilis vacuum freeze-drying juice powder is 4.55%/h.(4)A kind of solid beverage was prepared by spray drying and drying.The formula was optimized by changing the amount of sweetener,citric acid and edible salt,so as to provide technical basis for the development of Eulie products.The sweeteners were erythritol 53.33%and inulin 46.67%instead of sucrose.The results showed that the sensory value and dissolution time were selected as the indexes,and the optimal formula was 45%sweetener,0.2%citric acid and 0.8%salt.Under this condition,the comprehensive score was the highest.
