In this paper,Fenghua ?Yulu? peach,which is known as "the first peach in China",was taken as the research object to study its aroma components qualitatively and quantitatively,and to determine its key aroma compounds,the aroma composition and the aroma interaction between the key compounds were analyzed.Aroma profiles and aroma-active compounds of Fenghua peach(one of the four traditional peach producing areas in China)were investigated by headspace solid-phase microextraction(HS-SPME),solvent-assisted flavor evaporation(SAFE),gas chromatography-olfactometry(GC-O),gas chromatography-mass spectrometry(GC-MS),flame photometric detection(FPD).A total of 85 aroma-active compounds,including 10 sulfur compounds,were detected.Importantly,methional,methyl 3-(methylthio)propionate,methionol,and benzothiazole were first detected in peaches.A total of 51 compounds were determined after GC-O.In addition,45 key aroma compounds were identified by the odor activity value(OAV).The results indicated that hexanal,3-methylbutanal,(E)-2-hexen-1-ol,3-mercaptohexyl acetate,(E,E)-2,4-decadienal,2-methylpropanal,?-decalactone,2-methylbutanal,theaspirane,and ?-decalactone were the key aroma-active compounds.Six notes of fruity,green,flower,sweet,sulfur and sour were obtained by sensory attribute analysis,among which the intensity of fruity,green and flower were higher.The key characteristic aroma components were further ascertained by aroma reconstitution and omission experiments,which showed that the electronic nose chromatographic peaks of the recombinant sample and the original sample had good overlap and the fruity,floral,sulfur,and sour notes could be well simulated.The perceptual interactions between sulfur compounds unitary,binary and ternary systems and fruity recombination were determined by S curve method.3-mercaptohexanol and 4-methyl-4-mercaptopentan-2-one could significantly decrease the threshold of fruity recombination.The possible reason was that these two sulfur compounds had synergistic effects with the aroma compounds in fruity recombination.The interaction experiments on aroma intensity were studied by ?-? plot method.Finally,the U model confirmed the results of these synergistic effects.
